Cheesy Chicken Tenders

My kids started school YESTERDAY!  It’s been a whirlwind summer.  We have been so busy I can’t believe it’s over.  It has been a really fun one. The highlight was spending 2 weeks at the beach.  It was so nice to get away and relax for 2 weeks straight.  It was hard to come back home.  Now it’s tough to get back into that school mode.  Waking up has been a challenge.  One of our favorite meals is cheesy chicken tenders so I thought I would make those this first week back.  All three kids love them so no arguing from them.

We decided to end the summer with a bang.  We’ve been going to Carowinds, a local theme park where we have season passes, swimming, and just playing with friends.  My kids love movie night so we have been having lots of those.  We just heard that you can pre-order Captain Underpants:  The First Epic Movie.  My kids love those Captain Underpants books so they are so looking forward to this movie and it’s perfect for movie night.  Harold and George are such good friends and I can’t wait to see what they get into.  Also, Kevin Hart voices George and I think he’s hilarious. I’ve heard it’s good, so it should be a good night.

We usually have Lance crackers (from Walmart) in the pantry so I thought I would try out a new recipe.  Did you know Lance has been around for over 100 years?  CRAZY! I love that they don’t have high fructose corn syrup and you can grab them and go in a hurry, which is usually my family running to different practices during the week.

Cheesy Chicken Tenders

Ingredients

  • 1.5 lbs chicken tenders
  • 3 packs Lance Grilled Cheese, crushed
  • 1 stick butter, melted
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  • Preheat the oven to 400F.
  • Place butter in bowl and place in microwave until melted, usually a minute or two.  Place flour in a second bowl and crushed Lance crackers in a third.  Yes, I know this seems like a lot, but you will not regret getting these bowls dirty.
  • Cover you chicken tender in flour, dip in the butter, and then roll in the crackers until chicken is covered.
  • Place chicken tenders on a pan and then the oven.
  • Cook for 15 minutes, flip chicken and cook for another 8 minutes or until done.

After dinner we had a movie night.  We have these often, at least twice a week.  Its a fun and inexpensive way to have some family time.  Our most favorite snack during movie night is Pop Secret Movie Theatre Butter Popcorn (from Walmart).  It’s a great snack to celebrate movie night and the butter taste is great.  We are already planning ahead for when the Captain Underpants movie arrives.
