Kid Approved Meatloaf Cups

I’m sure, like most families with kids, that you have Goldfish® crackers in your pantry. I know I have several bags and cartons floating around in there. They aren’t just for snacking kids! I made this delicious meatloaf with them and it’s turned into a family favorite.
1 1/2 lbs ground beef
8oz can tomato sauce
1 cup cheddar Goldfish crackers
1 medium onion, diced
1 green pepper, diced
1 egg (optional)
2 Tablespoons ketchup
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
pepper to taste
I love this recipe because it doesn’t require lot of bowls and make a huge mess. Make sure to preheat the oven to 350F. The first thing I do is chop up the onions and peppers. I put the Goldfish crackers in a bag and crush those with the can of tomato sauce.
Now I start adding everything to the bowl. I put in the ground beef, tomato sauce, diced onions and peppers, crushed Goldfish crackers, ketchup and seasonings. Before I add in the egg, I take some of the mixture out. I’m allergic so I make sure I pull some out for myself. The only way to get this mixed well is with your hands. I know, not most my favorite part, but sometimes your hands are the best utensil you’ve got.
I make my meatloaf in these awesome silicon muffin cups. If you want to leave the egg out it will be perfectly fine. The amount in the cups are so small you really don’t need that binder to hold them together since you aren’t slicing it up. I try to make them all about the same size so they’ll all be done at the same time. I usually give a squirt of ketchup on top before putting it in the oven. If you don’t want to do muffins, then you can always use a 9″ X 5″ loaf pan. It requires about 3o more minutes of baking.
Bake at 350F for 35-45 minutes. This doesn’t take as long to cook as using a loaf pan and the kids love their own small portion. I usually serve this with a side salad and we ALWAYS have Goldfish crackers to top it!
I get my Goldfish snacks at Walmart and they are really easy to find. I usually get them in these bulk sizes because we go through them so fast! It looks like a lot of other people do too! 🙂
