Mini Chocolate Banana Muffins

I’m always looking for new snacks for my kids when they get home from school.  Depending on the day, we eat at different times because of sports practices and games.  Sometimes we eat a heavy snack and other days we eat a light snack and have dinner earlier.  I came up with these little mini chocolate banana muffins the other day and they were a hit.  My kids are addicted to Carnation Breakfast Essentials, so adding it in was a no brainer to add it in to my recipe and the kids ate them up.

Mini Chocolate Banana Muffins

Mini Chocolate Banana Muffins (makes 36)

Ingredients

  • 2 bananas
  • 2 cups flour
  • 3 tablespoons applesauce
  • 1/2 cup apple juice-  (You may need to add a little more if your batter is a little thick.)
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2/3 cup Chocolate Carnation Breakfast Essentials (2 packs)

Instructions

Preheat the oven to 350F.  First, you’ll want to smash up your 2 bananas and add in your other wet ingredients.  Stir until it’s well mixed.  Next you’ll want to add in your Chocolate Carnation Breakfast Essential and stir.  Last, add in your dry ingredients, baking soda, baking powder, and flour.  Stir until smooth.  Spray the muffin pan with a nonstick spray and fill each cup to the top.  Bake for 11-13 minutes.

I kept some out for us to snack on and put half in the freezer to pull out another week.  My kids also LOVE the banana smoothie recipe that’s on the package and make it often for an after school or late night snack.  I had to stock up and buy the 30 pack of the Carnation Breakfast Essentials the other day because we were going through it so fast!  It’s great because they can make the smoothie or mix in milk by themselves.  It’s really convenient.   They don’t need me if I’m rushing around with homework or getting uniforms ready for the big game that night.  I remember drinking it in the mornings when I was younger, rushing out the door to get to school on time and now they do the same thing! 🙂
