Week Night Broccoli Beef and Tuna Spring Rolls

We have a busy schedule and with lacrosse, soccer, and baseball starting in the next couple of weeks, we’ll be even busier.  Trying to find a time to squeeze dinner can be a challenge and it’s so much easier to get take-out, but it can get expensive.  I always think homemade dinners taste better and are healthier anyway.

I love getting take-out, but it can get really expensive for the entire family. You can make your own week night broccoli beef in just few minutes. Week Night Broccoli Beef

I’ve discovered Blue Dragon.  They make spring roll wrappers and a variety of sauces to make dinner easy.  They have broccoli beef, general tao, pad thai, and more.  I live in NC and you can get them at Food Lion and Harris Teeter.  I decided to try broccoli beef because that’s one of my favorites. 🙂  You can find them in other stores too.  If you live near Boston, then you can find them at Demoulas, Stop & Shop, and Shaws.  In the Baltimore-area: Giant Landover, and Philadelphia area: Shoprite and Giant Carlisle

Broccoli Beef and Tuna Spring Rolls

Ingredients

  • 2/3 cup broccoli florets
  • 1/2 lb beef sliced thinly (I used a little more because i couldn’t find a pack that small.)
  • 1 red onion sliced
  • rice or noodles (I used rice.)
  • 1 package of Blue Dragon Broccoli Beef sauce

Start your rice or noodles now so that’s cooking while your preparing the broccoli beef.  Heat up oil in your wok and cook your meat.  It only takes a few minutes.  Add in your onions. and broccoli.  Cook a couple more minutes and then stir in your sauce.  That’s it.  It only took me 15 minutes start to finish this dinner.  It was so easy and flavorful.

Since this was so easy, I decided to try making tuna spring rolls.  I was very intimidated about this.  It looked complicated, but I was wrong.  I plan on making these for lunch.  It was very light and refreshing.

Tuna Spring Roll Ingredients

  • 1 can tuna in water
  • leaf lettuce
  • 2 green onions, sliced thin
  • cucumber, sliced into thin strips
  • red pepper, sliced into thin strips
  • salt to taste
  • Blue Dragon spring roll wrappers

First, you’ll need to soak your wrapper in water for about 20 seconds and lay on a wet cloth.  I didn’t know any of this, but the instructions were on the back of the package.  Now you’ll layer your ingredients.  Lettuce first, then add your tuna on top, add your sliced cucumber, red pepper, and onions on top.  That’s it.  You’ll  fold up the ends, then roll.  The complete instructions on how to roll (with images) are on the back on the package.
