One Pot Corned Beef and Cabbage

Corned Beef and cabbage isn't just a meal for St. Patrick's Day. We eat this delicious meal about one a month. It's a simple, one pot dish.
Ingredients
  • Corned beef roast
  • 2 bottles of beer- The darker the better.
  • 1 head of cabbage
Instructions
  1. Add 2 beers to a large pot.
  2. Add corned beef. Mine comes with a spice packet and I add that in. Yours probably will too. Fill with water until the roast is submerged.
  3. Bring to a boil. Cover and simmer for 2 hours.
  4. At the 2 hour mark, add your cabbage leaves to the pot. Cook an additional 30 minutes. (I usually only add in about half a head.)
