Quick and Easy Loaded Potato Wedges

These quick loaded potato wedges are perfect for a regular week night meal or party for watching a football game. Everyone loves them!
  • 4 russet potatoes
  • ⅓ cup olive oil
  • 1½ cups shredded colby jack cheese
  • 5 slices cooked bacon, cooked crispy
  • 4 tablespoons green onions, sliced thin
  • 1 cup sour cream
  • salt and pepper to taste
  1. Wash potatoes and cut them into fourths.
  2. Sprinkle with salt and pepper and add to a microwave safe container.  Cook on high for 10 minutes. Let cool for 5 minutes.
  3. Cook bacon and slice green onions while potatoes are cooking.
  4. Preheat oven to 350F.
  5. Add potatoes to large baggie with olive oil.  Shake to coat potatoes.
  6. Take potatoes out put on baking sheet.
  7. Sprinkle with cheese, crispy bacon, and green onions.  Cook for 10 minutes.
  8. Let cool and serve with sour cream.
