Delicious and Easy Eggless Meatloaf Recipe

I’m sure, like most families with kids, that you have Goldfish® crackers in your pantry. I know I have several bags and cartons floating around in there. They aren’t just for snacking kids! I made this delicious meatloaf with them and it’s turned into a family favorite.

Eggless Easy Meatloaf Recipe

What makes this meatloaf awesome is that they are individual cups. I use silicone baking cups. I love them and they’re one of my favorite kitchen supplies.

Ingredients for egg free meatloaf muffins

Ground beef– 85/15 or 80/20 works well in this recipe.

Tomato sauce

Cheddar Goldfish crackers– If you don’t have Goldfish, you can use any other crackers you have in your pantry or even bread crumbs.

Onion– You’ll want to dice these small so you don’t get a big chunk of onion in a bite.

Bell pepper– You can use whatever color you have in your refrigerator. I used green because it’s the cheapest to buy.

Ketchup

Garlic and onion powder

How to make meatloaf without eggs or milk

Step 1

Preheat oven to 350 degrees. Dice the bell pepper and onion into small pieces. Put the crackers into a baggie and crush those using the can of tomato sauce.

Step 2

Add ground beef, tomato sauce, onions, pepper, crackers, ketchup and seasoning in a large bowl. Mix together well using your hands.

Step 3

Add your meatloaf mixture to your baking cups. Add a squirt of ketchup on top and bake for 40 minutes. You can use a 9″ X 5″ loaf pan, but the time will increase by 30 minutes.

Ingredients

  • 1 1/2 lbs ground beef
  • 8 oz can tomato sauce
  • 1 cup cheddar Goldfish crackers
  • 1 medium onion diced
  • 1 green pepper diced
  • 2 Tablespoons ketchup
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • black pepper to taste

Instructions
