Birthdays are coming up in my house and even though they can eat eggs, I can’t. I don’t want to make a cake that I can’t eat. This eggless vanilla cake will do the trick and make everyone happy!
Delicious Eggless Vanilla Cake Recipe
I have a bunch of eggless recipes on my site. All of them have ingredients that you would normally find in your pantry, no weird and expensive ingredients that you’ll use again.
When I first was finding recipes on the Internet for eggless desserts, they had unusual ingredients that I never bought. I had to go to a specialty store to buy them, then they’d just sit in my pantry until I realized they had expired and then they went into the trash.
The most unsual ingredient in any of my recipes is buttermilk. You can check out some of my other recipes so you can use it all up without it going to waste. This eggless chocolate cake is great too.

Ingredients for Vanilla Cake without Eggs
- Butter- You can use salted or unsalted butter for this recipe. Just use whatever’s in your refrigerator.
- Sugar
- Buttermilk
- Vanilla- I make my own homemade vanilla extract. It’s so good. Here are the instructions.
- All purpose flour
- Sugar
- Baking soda
- Baking powder
- Salt
How to make eggless vanilla cake
Step 1
Preheat oven to 350° F.
Step 2
In a large mixing bowl, cream butter and sugar. Add in buttermilk and vanilla and mix well.
Step 3
In a separate bowl, combine dry ingredients- flour, baking soda, baking powder and salt. Add mixture to the wet ingredients and combine thoroughly.
Step 4
Pour into greased cake baking pans and bake for 28-30 minutes or until a toothpick that’s inserted comes out clean.
Tip 1
The batter will be thick. Just use a spatula to divide the batter into your pans.
Tip 2
The toughest part in making egg free cakes is trying to get them out of the pan without them falling apart. You should have no problem with this cake. Make sure you spray your pans before baking and then run a knife around the edge to make sure it’s not sticking.
Frosting Recipes
You’ll need frosting for you cake. Here are two good recipes. You’ll need to double the recipes to be able to frost your entire cake.
I didn’t use anything fancy to frost my cake, just a butterknife and spatula.
Can I put eggless cake in the refrigerator?
The answer is yes, but you’ve got to cover it tightly. Grab some plastic wrap and put it right against the cake so as little air as possible can get to it. That will help keep it moist.

Eggless Vanilla Cake
Ingredients
- 1/2 cup butter room temperature
- 1 3/4 cups buttermilk
- 2 teaspoons vanilla
- 3 cups flour
- 1 1/2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350° F.
- In a large mixing bowl, cream butter and sugar. Add in buttermilk and vanilla and mix well.
- In a separate bowl, combine flour, baking soda, baking powder and salt. Add mixture to the creamed butter and combine thoroughly.
- Add batter to two greased 8" round pans and bake for 20-24 minutes.
- Let cool before turning out of pans and adding frosting.
