 I’m allergic to eggs so I use Mott’s® Natural Applesauce in many of my recipes for a substitution.  You can also use applesauce in any recipe that calls for oil.  Use 1/2 measuring cup of applesauce for every 1/2 cup of oil It’s great to reduce calories in baked goods and adds moisture!

I’ve recently been in a rut when it comes to packing lunch boxes and feel that I’m packing the same things over and over again.  I try to change thing up, but mostly buy a different kind of cracker or different fruit.  These are the perfect item to make and throw in there.

 I actually have a hiding place in my kitchen for lunch things that I don’t want the kids to eat.  If I left it out in the pantry, it would be gone before the weekend was over and none of it would make it to the lunch boxes.  

These mini applesauce muffins are healthy and homemade.  I know there isn’t any ingredients that I can’t pronounce.  They really don’t take long at all and perfect when you have an extra hour.

YUMMY Mini Applesauce Muffins

Ingredients

  • 1/4 cup softened butter
  • 1/3 cup sugar
  • 1 1/2 cups flour
  • 1/2 cup Mott’s Applesauce
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3 Tablespoons water
  • 1 teaspoon vanilla- Here’s how to make homemade vanilla!
  • sugar and cinnamon mixture for topping
Mini Applesauce Muffins

Directions

Preheat the oven to 350F.  First,  you’ll want to cream the softened butter and sugar with an electric mixer.  It will take a couple of minutes.  After that’s complete put all the other ingredients into the bowl and mix well.  

Grease your mini muffin pan before filling 1/2- 3/4 full.  Sometimes it’s hard to gauge because they are already so small.  Try to get them as even as possible so they’ll all be done at the same time.  I sprinkled about 1/4 teaspoon of the cinnamon/sugar mixture on top of each mini muffin.  Bake for 12 minutes.

Update:  Many people are commenting that the batter is thick.  It’s supposed to be thick.  You didn’t do anything wrong!

Ingredients

  • 1/4 cup butter softened

    Would they still taste good without adding the sugar? Would the recipe have to be adjusted?

  3. I just had to come back and say that these are my family’s #1 FAVORITE muffin ever. My daughter has an egg allergy, and I have tried all kinds of recipes with substitutes and then I found these. We make them weekly and I double the recipe to make a full pan of 24 mini muffins. We often skip the cinnamon and sugar on top to slightly lower the sugar content. They are still delicious! Yes, the batter is super thick–I spoon it into the pan. And I watch them very carefully while they bake. I take them out when just starting to golden brown so they end up fluffy and moist, like cake. Let’s just say that a double recipe disappears in less than 3 days at our house! Thank you, Holly, for this life saver!!
