I’m allergic to eggs so I use Mott’s® Natural Applesauce in many of my recipes for a substitution.  You can also use applesauce in any recipe that calls for oil.  Use 1/2 measuring cup of applesauce for every 1/2 cup of oil It’s great to reduce calories in baked goods and adds moisture!

Mini Applesauce Muffins

I’ve recently been in a rut when it comes to packing lunch boxes and feel that I’m packing the same things over and over again.  I try to change thing up, but mostly buy a different kind of cracker or different fruit.  These are the perfect item to make and throw in there.

I actually have a hiding place in my kitchen for lunch things that I don’t want the kids to eat.  If I left it out in the pantry, it would be gone before the weekend was over and none of it would make it to the lunch boxes.

These mini applesauce muffins are healthy and homemade.  I know there isn’t any ingredients that I can’t pronounce.  They really don’t take long at all and perfect when you have an extra hour.

  • 1 1/2 cups flour
  • 1/2 cup Mott’s Applesauce
  • 1/4 teaspoon salt

Mini Applesauce Muffins

Directions

Preheat the oven to 350F.  First,  you’ll want to cream the softened butter and sugar with an electric mixer.  It will take a couple of minutes.  After that’s complete put all the other ingredients into the bowl and mix well.

Grease your mini muffin pan before filling 1/2- 3/4 full.  Sometimes it’s hard to gauge because they are already so small.  Try to get them as even as possible so they’ll all be done at the same time.  I sprinkled about 1/4 teaspoon of the cinnamon/sugar mixture on top of each mini muffin.  Bake for 12 minutes.

Update:  Many people are commenting that the batter is thick.  It’s supposed to be thick.  You didn’t do anything wrong!

These are so tasty! My batter was thick, but not so thick it wasn’t good. The finished product was moist and extremely tasty. Love them.

  3. Sarra says:

We tried these and the consistency was on the thicker side, but cooked just fine. We added a little nutmeg into the cinnamon and sugar mixture.

I tried these and I liked them.
Taste – good. Not sweet but see modifications below
    Texture – more bread/dough like
Modifications – 1 extra table so if water and 1 extra table spoon of applesauce
Didn’t add any cinnamon or vanilla
    Didn’t add sugar on top
I made 12 regular size muffins i.e. not large coffee shop size but not mini one bite.

Batter was thick hence me adding extra sauce and water but not so thick it couldn’t be spooned into cases.
