Summer Pasta Salad
I feel like I haven’t done a recipe in a really long time, but I’ve made this twice in two weeks so I thought I would take a picture and write it up. My kids have been eating this like CRAZY lately. It’s a great dish for lunch, parties, and dinner. I even took it camping for Memorial Day weekend. It’s so colorful and perfect for hot summer days. I usually make mine in the morning so I don’t have to worry about fixing it in the evening.
- One box of rotini pasta
- 1 bottle of Italian dressing
- mini pepperonis
- shredded carrots
- red pepper
- yellow pepper
Cook the pasta according to the instructions. While it’s on the stove you can start chopping up your peppers. I use shredded carrots for convenience. Once the pasta is done, drain and cool. Once it’s cool you can mix in all the ingredients. I only use about 3/4 of the dressing. Once I pull it out of the refrigerator, I squirt a little more on it to make sure it’s good and covered.
The best part of this recipe is that you can change out the ingredients to whatever you like or have in your cabinet or refrigerator. Here are some other things that I like to put in my salad.
- cherry tomatoes- There are some growing in my garden right now!
- Mozzarella cheese
I often make this dish when I’m cleaning out my refrigerator. I may have half a tomato, half a pepper, a can of olives, and some broccoli that’s going to go bad and I just throw it all together for a delicious meal!
