If you are a regular reader of my blog then you know I I have a busy life with 3 kids and a husband.  This simple shrimp fried rice has been a life save this spring.  We’ve been so busy with soccer, lacrosse, and baseball and cooking dinner has been challenging some nights.  This is a great meal because you can have the ingredients in your freezer and pull them out last minute.  It’s the perfect backup meal when you don’t have anything planned.

I love meals like this!  So simple.  I also received an Instant Pot for a Christmas gift so I’ve been trying to use it more and more.  I made the rice in that while I was doing all the other cooking.  If you haven’t gotten an Instant Pot yet, I would suggest investing in one.  It is nice to set it and walk away.

I had never cooked with a wok, but my husband wanted one years ago when we did our wedding registry.  I slowly began using it more and more and now can’t live without it.  You can really cook a ton of things in it.  I’m needing a new wok and thinking about getting this one. Simple Shrimp Fried Rice

Ingredients

  • 12 oz medium raw shrimp, peel, deveined, and tail off
  • 6 cups cooked rice
  • 1 tablespoon sesame oil
  • 2-3 tablespoons soy sauce
  • 16 oz bag frozen Food Lion peas & carrots, defrosted
  • 2 eggs
  • 1/2 onion, chopped
  • Green onions to top

Directions

  • Cook rice according to directions.
  • Heat sesame oil in pan on medium-high.  Add shrimp and sauté  for about 2 minutes on each side.  Take and put aside.
  • Add chopped onions to pan and cook for about 4-5 minutes.
  • Push onions over to the side and add 2 eggs.  Stirring continuously until done.  Add in defrosted peas and carrots and stir all together.
  • Add in cooked rice, soy sauce, and shrimp and stir until all ingredients are well combined.
  • Top with green onions.
