First off, I bought a new laptop and now I’m able to type this up while sitting at soccer practice. Woohoo! I know this has nothing to do with a strawberry lemonade mimosa, but I had to tell someone. The only thing that would make this better is if I actually had a mimosa right now!
Strawberry Lemonade Mimosa with Basil
I was at baseball this weekend and the weather was so nice and the sun was shining. It reminded me that it’s time to start thinking about my garden and having some drinks on my patio.
I love strawberry season and live in North Carolina and it will be here in about 6 weeks. We have a strawberry patch less than a mile from my house and we go all the time.
It’s a farm that you can pick them yourself or buy already picked for a few dollars more. We stock up and freeze them so we can use them in smoothies.
These aren’t the glasses in my photos, but I LOVE these! I just added them to my wishlist. They are perfect for a Mother’s Day brunch or New Year’s Eve.
You will need three fresh ingredients to make this tasty cocktail.
strawberries
lemons (Here’s an inexpensive lemon juicer you can purchase online.)
basil (I grow this in my garden.)
One good thing about this recipe is that you can make it nonalcoholic too, just add in more water instead of Prosecco. Now kids can have some fresh strawberry lemonade too.

Ingredients
1cuplemon juiceabout 6-7 lemons
1cupgranulated sugar
2/3cupwater
2 1/2cupswater
3/4cupstrawberries
8basil leaves
Prosecco
Instructions
Juice lemons making sure to get out all the seeds.
Add lemon juice, strawberries, and basil to blender and blend until smooth.
Add lemon juice mixture, 2/3 cup water, and sugar to pot. Set on medium low and cook until sugar is melted. Stirring continuously and cooking for a few minutes. Do not over cook.
Pour into pitcher and add and additional 2 1/2 cups water and stir well.
To serve add strawberry, lemonade, and basil mix to desired amount of prosecco, a ratio of at least 1:1.
