Crock Pot Thai Chicken

Since school and after school activities have started I decided to break out my crockpot. It’s been put away most of the summer, but I need some meals that are ready when we get home from practices.  This is a super easy recipe that doesn’t require much time at all.

I just tried this of the first time today.  I put it in at lunch and it was ready by 8:00, when we got home from football practice.

Crock Pot Thai Chicken

Ingredients

  • 1 1/2 to 2lbs chicken thighs
  • 1 12 oz jar of salsa
  • 1/2 cup peanut butter
  • 2 Tablespoons lime juice
  • 1 tsp dried ginger

Cook in crock pot on low for 8 hours.  Serve over jasmine rice.

This was easy to make and we have a little left over for lunch tomorrow for my husband (or me).  It was perfect to come home after a busy day running errands and the kid’s activities.  I served it with a simple salad.   When I got home all I had to do was put the rice on to cook.  I just used the rice in a bag and it only took 10 minutes.
