Three-Bean Marinated Salad

There were some pretty good and VERY important football games this past weekend.  I didn’t want to spend all my time in the kitchen cooking and missing out on the fun, so I found an easy meal.  I wanted us to be able to watch the games together.  I decided on some family favorites that were flavorful delicious!

Luckily, the snow had melted and I ran out to Target and grabbed a Red Baron Classic Crust 4-Cheese pizza.  I also picked up an Edwards frozen pie for dessert.  I planned to make a three-bean salad so I got those ingredients for that too.

I like to have vegetables at every meal, so I thought my three-bean salad would be a great addition.  My favorite part is that I made it when I woke up that morning and let it sit in the refrigerator until we were ready to eat.


  • 1 can kidney beans, rinsed and drained
  • 1 can cut green beans, drained
  • 1 can wax beans, drained
  • 1/2 onion, diced
  • 1/2 green pepper, diced
  • 1 2-ounce jar pimiento, drained
  • 1/3 cup sugar
  • 1/3 cup canola oil
  • 1/3 cup vinegar
  • salt and pepper to taste

This is the easiest thing to make.  Just throw all the ingredients into a bowl and stir until well mixed.  This is a perfect recipe for your kids to help out with.  You’ll want this to chill for a couple of hours, but I think the longer it sits, the better.  I love this the next day for lunch.

This Hershey’s Creme Pie was so good too!  I’m actually eating a left over slice right now as I type! 🙂
