Crock Pot White Chicken Chili Recipe

Here’s a great crock pot white chicken chili that is so delicious on a cold day. Put it in your slow cooker for a warm meal.

I’ve been using my crock pot more since the weather is getting cooler.  I actually just got a new one because my old one went kaput!  (If you’re in the market for a new crockpot, here’s a good one!)

Anyway…I’ve been making this easy recipe for years.  It’s so good and I love that there is always some left over for lunch the next day.  I’ve been smelling it all day and can’t wait to eat it for dinner tonight! Your family will love this recipe!

Crock Pot White Chicken Chili

Slow cooker dinners are a lifesaver when it comes to busy school nights and you’d probably agree.  It’s also good that this is a fairly inexpensive meal.  I love you can get your protein from the chicken and beans in this meal.  

You can serve this with some bread and butter.  If you have a bread maker, then you’ll want to try this bread recipe.  I’ve gotten out of the habit of baking it, but I was setting the timer and making it about 4 times a week.  It makes great sandwiches too.  My kids LOVE fresh butter bread!

This recipe is also gluten-free and dairy-free.

Ingredients in slow cooker chicken chili recipe

  • Boneless skinless chicken breasts or thighs– I use thighs most of the time.
  • Onion– Chop small because you don’t want huge pieces when you are eating.
  • Chicken stock- The chicken broth is the base of the whole chili.
  • Garlic– Minced garlic in the refrigerated jar is fine in this recipe.
  • Lime juice– fresh lime juice or already squeezed from the bottle is fine.
  • Salt and pepper– Salt brings all the flavors together.
  • Cumin– This spice makes it a great Mexican flavor.
  • Oregano– You can replace this with Italian seasoning.
  • Corn– You don’t have to drain the corn. Just throw it in.
  • Great Northern Beans– You can use any other white bean. Make sure to drain and rinse these.

You can also add green chilis, chopped fresh cilantro, chili powder and sour cream.

How to make crockpot chicken chili

  • Add chicken, onion, garlic, broth, salt, cumin and oregano to slow cooker.  Cover. Cook time is 5-6 hours or until chicken falls apart. You can also cook on high if you’re in a hurry.
  • Shred the chicken using 2 forks.
  • Add in lime juice, corn, and beans.
  • Cook for 20 minutes longer or until heated through.

Make sure to double the recipe and freeze half for dinner another night.

Ingredients

  • 1 1/2 – 2 lbs boneless chicken breast or thighs- I use thighs most of the time.
  • 1/2 onion chopped
  • 1 15 oz can chicken broth
  • 1 1/2 teaspoons chopped garlic
  • 2 tablespoons lime juice
  • 1 1/2 teaspoons salt
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 can corn
  • 2 cans Great Northern beans drained and rinsed

Instructions

  • Add chicken, onion, broth, garlic, salt, cumin and oregano to slow cooker.  Cover and cook for 5-6 hours or until chicken falls apart.
  • Shred the chicken using 2 forks.
  • Add in lime juice, corn, and beans.
  • Cook for 20 minutes longer or until heated through.

Notes

Garnish with cilantro.  It’s not necessary, but REALLY delicious!
