Chocolate Whoopie Pies

I was bored this weekend so I thought I would do some baking.  It’s the last weekend in a LONG time that we won’t have sports taking up most the time.  Soccer and lacrosse games start this weekend and baseball the next.  I won’t have a lot of time to do anything in a few days.  Even laundry will be a challenge.  I had never attempted whoopee pies before, but my kids really like them.  Thank goodness they turned out the first time because they were staring at the timer on the oven waiting for them to come out.

My kids loved these chocolate whoopie pies I made the other day. They were really easy and quick to put together and gone in two days!

Most whoopie pie recipes have marshmallow cream as an ingredient for the filling.  I took a short cut and just added vanilla frosting.  No one said a thing about it so it was a win.  I included what frosting I used below which saved even more time.

Chocolate Whoopie Pies

Ingredients

  • 3 cups flour
  • 3/4 cup cocoa powder
  • 1 1/2 cups sugar
  • 1 cup shortening
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cups milk
  • 16 oz vanilla frosting-  I used this and it was SUPER easy!

  • Preheat oven to 350F.
  • Add shortening, eggs, and sugar to large bowl and mix for 2 minutes.
  • Add flour, cocoa powders, salt, baking soda, baking powder, milk and vanilla and mix until dough forms.
  • Drop by spoonful onto ungreased baking pan.  Bake for 12 minutes.
  • Remove from baking pan and cool on a wire rack.
  • When cookies are completely cool, add frosting to 12 cookies and top with the second.
