These almond shortbread cookies are a great treat for any special event or after-school snack. The honey and lime flavors make this cookie extra special.

Ingredients
2sticks buttersoftened
1/3cupsugar
1/4cuphoney
2 1/2cupsflour
1teaspoonlime juice
1/4teaspoonsalt
3/4cupslivered almonds
zest of 1 lime
Instructions
Preheat oven to 350F.
Add room temperature butter, lime juice, sugar, honey and lime zest to a large mixing bowl and mix for 1-2 minutes until the butter is nice and smooth.
Slowly add in flour, salt and almonds until well combined.
Lay the dough out on plastic wrap and form a log. Wrap in plastic wrap and refrigerate for 30 minutes.
After 30 minutes, unwrap and slice cookies 1/2″ thick and place on a baking sheet.
Bake for 12-15 minutes.
