Mini muffins are always a hit and these were gone within 10 minutes! These mini applesauce muffins are so light and fluffy with a little sugar and cinnamon on top! YUM!

Ingredients
1/4cupbuttersoftened
1/3cupsugar
1 1/2cupsflour
1/2cupMott's Applesauce
1/4teaspoonsalt
1teaspoonbaking powder
1/2teaspoonbaking soda
3Tablespoonswater
1teaspoonvanilla
sugar and cinnamon mixture for topping
Instructions
Preheat the oven to 350F.
Cream the softened butter and sugar with an electric mixer.
Add in applesauce and mix.
Add dry ingredients.
Grease your mini muffin pan before filling 1/2- 3/4 full.
Sprinkle about 1/4 teaspoon of the cinnamon/sugar mixture on top of each mini muffin.
Bake for around 12 minutes.

Tip 1
Many people are commenting that the batter is thick. It's supposed to be thick. You didn't do anything wrong!
Tip 2
You can make these into vegan applesauce muffins by replacing the butter with a vegan brand such as Earth Balance.
