Ingredients
4russet potatoes
1/3cupextra virgin olive oil
1 1/2cupscolby jack cheeseshredded
5slicesbaconcrispy
4tablespoonsgreen onionssliced thin
1cupsour cream
salt and black pepper to taste
Instructions
Preheat oven to 350F.
Wash potatoes and cut them into fourths. Sprinkle with salt and pepper and add to a microwave safe container. Cook on high for 10 minutes. Let cool for 5 minutes.
Cook bacon and slice green onions while potatoes are cooking in the microwave.
Add potatoes to large baggie with olive oil. Shake to coat potatoes. Take potatoes out put on baking sheet.
Sprinkle with cheese, crispy bacon, and green onions. Cook for 10 minutes.
