Corn Dip with Cream Cheese

This roasted corn dip recipe is amazing and perfect for every season, from summer to the holidays. This delicious dip is easy to make and ready in under an hour.

Who doesn’t love a warm cheesy dip? Most people do and this recipe is perfect for any party or weekend afternoon. Just put out some corn chips and dig in.

Corn Dip with Cream Cheese

Anyway…getting on to the dip. It doesn’t take long to make and only cooks for 30 minutes so it can be ready pretty quickly.

This can also be made in a slow cooker, it will taste just as good. I love slow cooking dips so they’ll stay warm the entire day or evening, for example, during the Super Bowl. People usually graze the entire night and it’s nice to have the dip stay at a warm temperature, from the beginning until the end.

This dip has the typical savory dip ingredients- cream cheese, sour cream, and CHEESE! Grab a large bowl and baking dish, preheat the oven and start cooking.

Roasted corn cheese dip can be served with tortilla chips or any kind of cracker, like Ritz.

Kitchen Tools to make this Roasted Corn Dip Recipe

Air Fryer– This is the air fryer I have and I ONLY cook bacon in the air fryer now. If you don’t have one, this is a great one to buy. I use it several times a week.

Cheese grater– I love this box grater because there are several different blades you can use so it’s perfect for all kinds of recipes.

Handheld Electric Mixer– You can use a stand mixer for this recipe, but you don’t have to get it out if you don’t want to. A simple hand mixer will do fine. I actually use my hand mixer way more than my stand mixer. It’s just easier to get out and clean. Anyway, the hand mixer I linked to above is one I got for a wedding gift over twenty years ago and it’s still going strong and I bake A LOT! I definitely recommend it.

Cutting board mats– These are so easy to clean and use when cooking. You can bend them easily so that makes it easier to add ingredients to other bowls or pots and pans.

Cast Iron Skillet– I love my cast iron skillet. You don’t need one for this recipe, but if you have one then you need to pull it out for this corn dip.

Ingredients for Warm Corn Dip with Cream Cheese

  • Fire roasted corn
  • Cream cheese- You’ll want to make sure your cream cheese is at room temperature before you begin.
  • Sour cream
  • Cheddar cheese
  • Hot sauce- I normally use Tabasco because it’s a family favorite, but you can use whatever you like best.
  • Garlic powder
  • Bacon- Make sure to cook crispy!

How to make roasted corn dip

Step 1

Preheat oven to 350F.

Step 2

Add corn, cream cheese, sour cream, 5 slices of cooked and crumbled bacon, garlic powder, hot sauce and 2 cups cheese to a mixing bowl and mix until well combined.

Step 3

Place in the baking dish or cast iron skillet, top with 1/2 cup shredded cheese, and bake until heated through about 30 minutes.

Step 4

Garnish with more bacon and green onions and serve with tortilla chips or crackers.

Tip #1

If you don’t want to use canned corn, you can substitute frozen or fresh corn.

Tip #2

Make sure to add some crumbled bacon and chopped green onions after your dip comes out of the oven.

  • 2 15 oz cans fire roasted corn drained
  • 8 oz cream cheese softened
  • 1/2 cup sour cream
  • 2 1/2 cups cheddar cheese divided shredded
  • 1 teaspoon hot sauce
