Baked Cranberry Crisp

This is my very favorite cranberry dish for the fall and holiday season.  It’s so good.  I started making it and used it as a side.   I loved the sweet taste of cranberries with my meal.  However, this can be a great dessert with a scoop of ice cream on the side.  Everyone in my house loves this, kids included.  I also stock up on fresh cranberries this time of year so I can make after the holidays.  Scroll down to grab this baked cranberry crisp recipe!

I love cranberries and they are so good for you.  Not sure about them being coated in sugar in this recipe though. 🙂  They are considered a super food so I try to eat them when I can.  I love dried cranberries in my oatmeal in the mornings.  They decrease blood pressure which is probably good for all moms out there!  You can eat them with salads and yogurt too.

My kids love this recipe and you can make it ahead of time and cook it during dinner.  You can even cook it ahead of time and heat it back up in the microwave.  You’re basically making granola for the topping and it so good to have that crunch with the soft apples and cranberries.

Baked Cranberry Crisp

Ingredients 

  • 3 cups chopped apples, about 3
  • 2 cups whole, fresh or frozen cranberries
  • 1/3 cup white sugar
  • 1/4 cup brown sugar

Topping

  • 1 stick butter, melted
  • 1 cup oatmeal (I use quick or regular oats.)
  • 1/4 cup brown sugar
  • 1/4 cup flour
  • 1/3 cup chopped nuts (I used walnuts because that’s what I had in my cabinet. 🙂 )

Directions

  • Preheat oven to 350F.
  • Put apples, cranberries, white sugar, and brown sugar in 9×9 casserole dish and stir until apples and cranberries are coated with sugar.
  • Mix melted butter, oatmeal, flour, brown sugar, and nuts and stir. Once combined spread on top of apples and cranberries.
  • Bake for 45 minutes.

      I am updating this post right now! I guess I was in a hurry when I did it the first time. I have it baking and will have new pictures too!
