It has been a crazy Monday for me today! First, I had to take my dog to the vet because we are boarding her over the holidays.  Who else waits until the busiest time of year to do this?

I wrapped a few Christmas presents to get some of that out of the way.  After lunch, I had to take my son to the doctor because he injured his shoulder playing backyard football. He couldn’t even lift his arm up to put the gallon of milk away this morning. Luckily, it’s just bruised he stretched out the tendon.

We got home just in time for the bus to arrive with my other two kids and now homework and dinner! Whew!

Sweet Potatoes in the Slow Cooker

Luckily, I had thought ahead and already put some of my dinner in the slow cooker.  This really isn’t a recipe, but more of just an easy hack.  I ALWAYS underestimate the time it takes to cook sweet potatoes or regular potatoes.  If I do them in the microwave, I’m constantly adding a few more minutes and they still aren’t cooked in the middle.  If I do them in the oven, the rest of the dinner is always ready first.

I make sure to scrub them good with my scrub brush.  My husband and a couple of kids eat the skin so I want them to be nice and clean.  Then just drop them in the crock pot.  You don’t need to add water or anything.  I put them in around lunch on low and they are ready by dinner.  They are super soft and ready for our toppings!

It’s super easy and the house is smelling good all day!
