DELICIOUS Avocado Chicken Salad in a pita

I know you clicked on this recipe because you probably love avocados as much as I do!  This is such a yummy lunch! I’m allergic to eggs so I can’t have normal chicken salad so this avocado chicken salad is a great alternative.  I get so bored with sandwiches and this is a good meal I like to eat after a workout because of all the protein.  I’m sure I’ll make it a lot with the kids home for the summer.

Making shredded chicken is so easy.  I usually make a huge batch at a time and freeze what I don’t use.  Then I can pull it out to make enchiladas, tacos, quesadillas, and now avocado chicken salad.  It’s a huge time saver when you’re running a million different directions on a school night.

Avocado Chicken Salad

Ingredients

  • 2 cups shredded chicken
  • 4 avocados, chopped
  • 1/2 cup onions, chopped
  • 4 tablespoons lime juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Pita bread

This avocado chicken salad is the perfect lunch for avocado lovers. It's a delicious and healthy lunch that's easy to prepare. Even my kids love it.Directions

  • Place chicken breast in a pot of boiling water. Turn down and simmer 20-30 minutes or until chicken is done.
  • Let cool and shred chicken using 2 forks.
  • Add all ingredients to bowl and stir well to combine.
  • Serve in pita bread.
  • Store extra in airtight container in refrigerator.  I just bought these and LOVE them- glass and airtight.
