Chicken Salad without Mayo Recipe

This delicious chicken salad without mayo is the perfect lunch for avocado lovers. It’s a healthy meal that’s easy to prepare with only a few ingredients. Even my kids love it.

I know you clicked on this recipe because you probably love avocados as much as I do!  This is such a yummy lunch! I’m allergic to eggs so I can’t have normal chicken salad so this mayo-free chicken salad is a great alternative.  

Many of these types of recipes have sour cream or plain greek yogurt, however, I decided to make this creamy salad with avocados!

I get so bored with sandwiches and this is a good meal I like to eat after a workout because of all the protein.  I’m sure I’ll make it a lot with the kids home for the summer. Scroll down to the recipe card to get the full recipe.

Chicken Salad without Mayo Recipe

If you are new to my website then you need to know that I’m allergic to eggs and have been my whole life. I started playing around with recipes and now I post them here. Almost all my recipes are classic recipes that normally have eggs, but I change them to be egg free and with no weird ingredients.

I try to make all my recipes with items you normally would have in your pantry or refrigerator so no special trips to the grocery store for this egg free chicken salad.

I usually do some meal prep and making shredded chicken is so easy.  I make a huge batch at a time and freeze what I don’t use.  Then I can pull it out to make enchiladas, tacos, quesadillas, soup and now an easy chicken salad.  It’s a huge time saver when you’re running a million different directions on a school night.

Kitchen Tools for Healthy Chicken Salad Recipe

Wooden Spoons– You can never have too many wooden spoons. I have an entire drawer full and use one almost every day.

Cutting Board Mats– These are one of my favorite things I have in the kitchen. They don’t take up much space so they’re easy to store. They’re easy to clean and they are great for adding ingredients to mixing bowls and hot pots.

Large bowl– I LOVE stainless steel bowls. They are great in the kitchen for all kinds of cooking and baking. They hold up well and don’t need to replace often.

Ingredients for Chicken and Avocado Salad

Chicken– Chicken breasts are great for this. Leftover rotisserie chicken works great for this recipe too and saves a lot of time. You can also use boneless chicken thighs without the skin.

Ripe Avocados- Make sure these are fresh, but not hard.

Onions– white or red onion works for this recipe and make sure they are finely chopped. Red onion is best eaten raw and perfect for this recipe.

Lime juice– You can use freshly squeezed lime juice or the juice that comes in a bottle that you keep in your refrigerator if that’s what you have. You can use lemon juice if you’re in a pinch, but I prefer lime.

Garlic powder

Salt and ground black pepper to taste

Pita bread– You don’t have to use pita bread. You can simply put this chicken salad recipe on toast, a couple of slices of bread, or even romaine lettuce leaves to make it low carb. Making a lettuce wrap is a great way to eat this chicken salad.

Optional- Green onions- I love adding green onions to recipes and if you have them, add them! Just sprinkle them on top.

How to make No Mayo Chicken Salad

Step 1

Place chicken breast in a pot of boiling water. Turn down and simmer for 20-30 minutes or until the chicken is done. Let cool and shred cooked chicken using two forks.

You can also shred chicken the easiest way ever! This is the only way I do it now.

Step 2

Add all ingredients to a large mixing bowl and stir well to combine.

Step 3

Serve in pita bread.

If you plan on saving some of this recipe until the next day, store leftovers in an airtight container in the refrigerator.  I just bought these and LOVE them- glass and airtight. When you are storing anything with avocados you need to make sure that you expose the avocado to as little air as possible because it turns brown. Try using some plastic wrap to place on top of the leftovers, then add the lid.

Ingredients

  • 2 cups chicken shredded
  • 4 avocados chopped
  • 1/2 cup red onions chopped
  • 4 tablespoons lime juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Pita bread

Instructions

  • Place chicken breast in a pot of boiling water. Turn down and simmer for 20-30 minutes or until the chicken is done. Let cool and shred chicken using two forks.
  • Add all ingredients to a bowl and stir well with a wooden spoon.
  • Store extra in an airtight container in the refrigerator until you are ready to serve.
  • Serve in pita bread, lettuce wrap or toast.
