Spring is finally here!  I love the warmer weather and summer.  However, it’s the time my family is busiest.  I have three kids and we have soccer, lacrosse, baseball, flag football, and basketball going on right now.  Some days I’m making dinner as soon as the leave for school because that’s the only time I have to do it.  If not, then I need a meal I can make fast.  This creamy pea salad with bacon is the best.  I love it because it can be a side for dinner, school lunches, pot luck, and taking it to the pool in the summer.  Another reason is that is has peas which is getting my kids the veggies they need!

Creamy Pea Salad with Bacon

Ingredients

  • 5 slices cooked bacon, crispy and chopped
  • 2 cans Le Sueur Very Young Small Sweet Peas, drained
  • 1 cup dry pasta
  • 1 pint cherry tomatoes, halved
  • 2 green onions, sliced
  • 1/2 cup colby jack, shredded

Dressing Ingredients

  • 1 cup sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dill
  • 1 tablespoon parsley

Directions

  • Cook bacon until crispy.  I usually do mine in the oven when I do recipes like this.
  • Cook pasta according to package directions. Let cool completely.
  • While bacon and pasta are cooking, mix up the dressing.  Combine all ingredients and stir until well combined.
  • Once pasta has cooled, combine crumbled bacon, Le Sueur Peas, pasta, tomatoes, green onions, and cheese.
  • Next, add as much dressing to the salad as you would like.  I like a lot and my husband likes it less creamy so I can adjust the recipe and add as much or as little as I want to this dish!
