Spring is finally here!  I love the warmer weather and summer.  However, it’s the time my family is busiest.  I have three kids and we have soccer, lacrosse, baseball, flag football, and basketball going on right now.

Some days I’m making dinner as soon as they leave for school because that’s the only time I have to do it.  If not, then I need a meal I can make fast.  This creamy pea salad recipe with bacon is the best.  

I love it because my kids love pasta salad and this reccipe can be a side for dinner, school lunches, pot luck, and taking it to the pool in the summer.  Another reason is that is has peas which is getting my kids the veggies they need!

Recipe for Easy Pea Salad with Bacon

I make sure my pantry is always stocked so I can throw something together fast.  Le Sueur ® Very Young Small Sweet Peas is something that’s always there.  You can use them in winter soups, chicken pot pies, or a quick and convenient side dish for dinner.  These tender sweet peas are perfect for creamy pea salad.  I feel they hold up well and stay firm when cooking and they consistently have quality products.  They’ve been around 100 years!

Ingredients for creamy pea salad

Bacon– You’ll want your bacon to be extra crispy. You can also you bacon bits if you’re in a time crunch.

Canned peas– Make sure to drain these. Frozen peas will work if you don’t have canned.

Pasta– I like to use macaroni noodles

Cherry tomatoes

Green onions– Red onions are very good in this recipe too.

Colby jack– I like Colby jack because it’s a milder flavor, but you can use sharp cheddar cheese if you like that flavor.

Ranch Dressing Ingredients

  • Sour cream
  • Salt and black pepper
  • Onion powder
  • Garlic powder
  • Dill
  • Parsley

How to make this green pea salad recipe

Step 1

Cook bacon until crispy.  I usually do mine in the oven when I do recipes like this.

Step 2

Cook pasta according to package directions. Let cool completely.

Step 3

While bacon and pasta are cooking, mix up the dressing.  Combine all ingredients in a large bowl and stir until well combined.

Step 4

Once pasta has cooled, combine crumbled bacon, Le Sueur Peas, pasta, tomatoes, finely chopped green onions, and cheese.

Step 5

Next, add as much dressing to the salad as you would like.  I like a lot and my husband likes it less creamy so I can adjust the recipe and add as much or as little as I want to this dish!

Ingredients

  • 5 slices cooked bacon crispy and chopped
  • 2 cans Le Sueur Very Young Small Sweet Peas drained
  • 1 cup dry pasta
  • 1 pint cherry tomatoes halved
  • 2 green onions sliced
  • 1/2 cup colby jack shredded

Ranch Dressing Ingredients

  • 1 cup sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dill
  • 1 tablespoon parsley

Instructions

  • Cook bacon until crispy.
  • Cook pasta according to package directions. Let cool completely.
  • While bacon and pasta are cooking, mix up the dressing. Combine all ingredients and stir until well combined.
