White Chocolate Cranberry Cookies- The BEST Eggless Christmas Cookies

These eggless Christmas cookies are a holiday favorite. They’re the best treat for family, friends, neighbors and teachers or just to snack on at home! You will make these time and time again.

If you are a regular reader of my website, then you know I love cookies. It’s one of my favorite things to make and make them often. Cookies don’t take long and that means you can eat them even sooner. Warm cookies, out of the oven, are the best.

If you are new to my site then you need to know I’m allergic to eggs and have been my entire life. I was always limited in what I could eat. I tried making egg-free recipes I found on the Internet and many times they had weird ingredients that required me to go to some specialty grocery store to buy and would be expensive. It would sit in my pantry and never be used again.

I started creating my recipes using regular inexpensive ingredients that you would normally buy. I have three kids so my life is about keeping things simple!

Eggless White Chocolate Chip Cookies

I’m not normally a fan of white chocolate and I think this is the only recipe I have that includes it. It goes so well with the dried cranberries. Pecans are what makes this recipe the best and it gives it that extra holiday taste. I also love this recipe because no cookie cutters are needed!

Tools to make Ginger Cookies

Baking Sheet– I’ve had these baking sheets forever and love that they are bigger. I can usually get 16 cookies on a sheet when I’m baking.

Handheld Electric Mixer– You can use a stand mixer for this recipe, but you don’t have to get it out if you don’t want to. A simple hand mixer will do fine. I actually use my hand mixer way more than my stand mixer. It’s just easier to get out and clean. Anyway, the hand mixer I linked to above is one I got for a wedding gift over twenty years ago and it’s still going strong and I bake A LOT! I definitely recommend it.

Large bowl– I LOVE stainless steel bowls. They are great in the kitchen for all kinds of cooking and baking. They hold up well and don’t need to replace often.

Nut Chopper– You can buy pecans that are already chopped for this recipe or you can chop them yourself. I love these nut choppers. I was always in charge of this when I was a kid.

I started an eggless recipe board on my personal Pinterest page and then realized that I should probably link it to my blog.  It’s great finding recipes that are egg free and when I need one I can go look and eat everything in it.

Ingredients in Delicious Eggless Cranberry White Chocolate Chip Cookies

  • Butter– I normally use salted butter, but unsalted works fine too. Make sure it’s room temperature.
  • Sugar
  • Applesauce– You can use sweetened or unsweetened. I use what I have in my refrigerator.
  • Brown sugar
  • Vanilla– Making vanilla extract is so easy. You can get directions here. I just found vanilla beans at Costco for $12.99!
  • All purpose flour
  • Baking soda
  • Salt
  • Dried cranberries– They’ve opened a Costco less than five miles from my house. They have these whole dried cranberries that are the best. They are juicy and inexpensive.
  • White chocolate chips
  • Walnuts or pecans– I like pecans in my baked goods, but walnuts work just as well.

How to Make Easy Eggless Christmas Cookies

Step 1

Preheat oven and cream butter, sugars, applesauce and vanilla for a couple of minutes in a large mixing bowl.

Step 2

Add in flour, baking soda and salt- dry ingredients – and mix until combined. It starts crumbly but quickly comes together.

Step 3

Fold in pecans, craisins and white chocolate chips using a rubber scraper.

Step 4

Drop the cookie dough by the spoonful onto a cookie sheet (no parchment paper needed) and bake for about 12-14 minutes or until brown. Let baked cookies cool a few minutes before moving them to a cooling rack.

Store in an airtight container to keep fresh.

Ingredients

  • 1/2 cup butter room temperature
  • 1/4 cup applesauce
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup dried cranberries
  • 1/2 cup white chocolate chips
  • 1/2 cup chopped walnuts or pecans

Instructions

  • Preheat oven to 350F.
  • Add butter, brown sugar, white sugar, vanilla and applesauce to mixing bowl and cream using a hand mixer. This takes a minute of two.
  • Add in flour, baking soda and salt. Mix again. This starts out crumbly, but quickly comes together.
  • Fold in dried cranberries, chopped pecans and white chocolate morsels using a rubber scraper.
  • Drop buy spoonful onto baking sheet.
  • Bake for 12-14 minutes or until brown. Let cool for 2 minutes before transferring to a wire cooling rack.
