The Best Breakfast Buritto without Eggs

These delicious breakfast burritos without eggs are easy to prepare ahead of time, keep in the freezer, and heat up when you have those busy mornings.

After taking a few weeks off, I’m working on my website again and have made several eggless breakfast recipes I’ll be posting. I have a lot of desserts on my site, and most people try to eat healthy in January, so I thought I would switch it up and do some savory dishes this January. My kids love breakfast, so these recipes are always a winner in my house!

All three of my kids play sports- running, soccer, lacrosse and wrestling are all going on right now, so this is the easiest way to get healthy breakfast in them. These breakfast burritos are full of protein and an easy grab. The best is- They can make it themselves!! I love making a big batch and having breakfast all week for them.

These are the perfect breakfast burritos. The best part is they have no eggs! If you haven’t been to my website before, then you need to know that I have been allergic to eggs my entire life. I’m always working on recipes for foods I can eat! I like cooking with ingredients people normally have in their pantry already so no special purchases are needed. This is not a vegetarian breakfast burrito, but you can easily substitute the sausage for black beans or tofu to suit your needs.

Breakfast Buritto without Eggs

When my kids were young, I realized I was feeding them a lot of cereal, so I made a New Year’s resolution to do a no-cereal challenge for a year. It took me a few weeks to get in the swing of things, but it created a long-lasting habit for my kids and me to eat a good breakfast. This recipe doesn’t take much time and the best way to make a delicious and protein-filled breakfast.

I love breakfast burritos because you can make them ahead of time and keep them in the refrigerator or freezer. I don’t meal prep much, but when I do, it’s always breakfast food. I also have a camping breakfast burritos that I make, but it does contain eggs. I just thought I’d let you know about that for all the egg eaters because my kids love them.

Kitchen Tools to make make-ahead breakfast burritos

Air Fryer– This is the exact one I have, and we probably use it daily. My kids love it. This will get your hash browns golden brown and crispy.

Wooden Spoons– You can never have too many wooden spoons. I have an entire drawer full and use one almost every day.

Cutting Board Mats– These mats are one of my favorite things in the kitchen because they don’t take up much space. These mats are great for adding ingredients to mixing bowls and hot pots and can easily be wiped clean.

Rotary Grater– This is the best tool EVER! You can buy pre-shredded cheese, but if you buy a block of cheese, then this is the perfect tool to have. It’s so much easier than a box grater and you can also use it for veggies!

Ingredients for easy breakfast burritos

Pork sausage- I use the Jimmy Dean breakfast sausage found near the bacon in your grocery store. I get the mild kind because it makes the taste a little stronger. This is the brand I use in all my recipes that call for sausage.

Cheddar Cheese- I use mild or sharp cheddar cheese. I normally buy this and have it in my refrigerator at all times! You can also use a taco mix too.

Frozen hash browns- Make sure to buy the diced potatoes, not the shredded ones.

Green Bell Pepper- You can actually use any color of pepper you want, but you can use whatever you have on hand. Green peppers are usually the cheapest. You will dice this into bite-sized pieces.

Onion- This will be diced in small pieces because you don’t want to taste big chunks in your breakfast.

Large Flour Tortilla- The burrito sized pack is perfect.

Optional- You can add hot sauce or salsa to your cooking if you need additional spice!

How to make Easy Breakfast Burrito Recipe

These are super simple to make and only have a few steps.

Step 1

Place a skillet on medium heat and cook your sausage, onion and red peppers until the sausage is brown.

Step 2

Preheat the air fryer and cook your hash browns until golden brown.

Step 3

Now on to putting these burritos together. I make an assembly line. First, line up all the tortillas and add equal amounts of the burrito fillings in each large tortilla. Top with shredded cheese. Roll up your burrito.

Step 4

This step isn’t necessary, but if I’m eating the breakfast burrito right then, I like brown my tortilla in a hot skillet to make crispy burritos. If not, go to Step 5.

Place on medium-high heat seam side down. Once brown, flip and brown the other side.

Step 5

Once your burritos are rolled up, they are ready to eat! If these are going to the freezer for later, you need to wrap them in parchment paper and secure them with a piece of tape. If you are keeping them in the refrigerator, wrap them in plastic wrap or foil.

Reheating Instructions

Reheating from frozen: Remove parchment paper from the frozen burrito and wrap it with a damp paper towel and place it on a microwave-safe plate. Reheat in the microwave for around 2 minutes. Microwaves may vary, so keep an eye on this. I have a 1000-watt and it takes 2 minutes.

Reheating from the refrigerator (Microwave): Take off the plastic wrap or aluminum foil and wrap in a damp paper towel. Heat up for about a minute.

Reheating from the refrigerator (on the stove): Add to a hot frying pan set on medium heat until the tortilla has browned, flip and do the other side, about 4-5 minutes per side.

Ingredients

  • 16 oz Breakfast Sausage
  • 1 cup Cheddar Cheese Shedded
  • 32 oz Frozen Hashbrowns Diced
  • 1 Green Pepper Diced
  • 1/2 Onion Diced
  • 8 Flour Tortillas burrito sized
  • Hot Sauce Optional

Instructions

  • Add our diced hash browns to an air fryer and cook until golden brown.
  • While hash browns are cooking, put a skillet on medium heat. When hot, add your sausage, diced onions and pepper and cook until brown.
  • Add equal amounts of the burrito fillings in each large tortilla. Top with shredded cheese.
  • Roll up the burrito.
  • Place burrito on medium-high heat seam side down. Once brown, flip and brown the other side.
