I have three busy kids so I only make easy desserts. I don’t have have time to make fancy food when I have to cart them to practices and games.

I love these eggless chocolate chip cookie bars because I can cook them all at once. I don’t have to make a batch, cook them and then put in the next batch. I can throw them in the oven, set the timer and move on with other things I have to do.

Eggless Chocolate Chip Cookie Bars

I use regular chocolate chips in this recipe, but you can switch it up and add mini ones, M&M’s, or a mixture of peanut butter and chocolate chips.

Once cooled, you can slice them up. They hold up well and don’t crumble like many eggless recipes.

I like to slice them into 16 squares, but you can do 12 if you like a bigger bar. I just like them smaller so my kids aren’t filling up on cookies at snack time or lunch.

Notes: You may not need all the oil and water for this recipe. Gradually add it in. When you are mixing with your electric mixer, the batter should ball up and not stick to the bowl. If to much water and oil are added, the batter will be sticky.

Ingredients

  • ½ cup salted butter room temperature
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 ½ cups flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla
  • ¾ cup chocolate chips
  • 3 tablespoons vegetable oil
  • 3 tablespoons water

Instructions

  • Preheat oven to 350F.
  • Cream butter, sugar, brown sugar and vanilla in a bowl with electric mixer.
  • Add flour, baking soda and salt to a separate bowl and stir with a wooden spoon.
  • Slowly add dry ingredients to wet ingredients while mixing.
  • Beat in oil and water.
  • Add M&M’s and stir with wooden spoon.
  • Add dough to greased 8”x8” baking dish and cook for 28 minutes or until done.

I came back to revise my previous review. The greasiness I mentioned yesterday is gone and they are chewy, perfect, and delicious! I will definitely be making these again!
