Baked Cranberry Crisp Recipe

This easy apple cranberry crisp makes a delicious side or dessert, especially when served warm with vanilla ice cream.

This is the kind of dessert you’ll find yourself making over and over again. It’s fantastic on its own, but add a scoop of vanilla ice cream and it becomes incredible. It’s simple, warm, and guaranteed to earn a permanent spot in your recipe rotation.

This is my favorite cranberry dish for fall and holiday season.  It’s so good and even better the next day.  I started making it and used it as a side because I love the sweet taste of cranberries with my meal. Howeverm this recipe was a little too sweet so I made a few changes and now I have dessert!

The sweet apples and tart cranberries make the perfect dessert. Everyone in my house loves this, kids included.  I also stock up on fresh cranberries this time of year so I can make cranberry recipes after the holidays.

Baked Cranberry Crisp

I love cranberries and they are so good for you.  Not sure about them being coated in sugar in this recipe though. 🙂  They are considered a superfood so I try to eat them when I can.

 I love dried cranberries in my oatmeal in the mornings.  They decrease blood pressure which is probably good for all moms out there!  You can eat them with salads and yogurt too.

My kids love this easy dessert and the best part is that you can make it ahead of time and cook it during dinner.  You can even cook it ahead of time and heat it back up in the microwave.  You’re basically making granola for the topping and it is so good to have that crunch with the soft apples and cranberries.

Kitchen tools to make apple cranberry crisp

Nut Chopper– You can buy pecans that are already chopped for this recipe or you can chop them yourself. I love these nut choppers. I was always in charge of this when I was a kid.

Apple Slicer– I can’t live without my apple slicer!  I went to a Pampered Chef party years ago and didn’t want to spend a ton of money, so I just bought the apple slicer and corer and I have used it way more than I thought I would. It saves time when making this recipe or just cutting up an apple for a snack. This is the exact one I have.

Square Baking Pan– This is a great 9″ X 9″ baking dish that comes with a lid. I like it because it turns into an airtight container you can store your leftovers in.

Stainless steel bowls-I LOVE stainless steel bowls and there are a lot of great options out there. They are great in the kitchen for all kinds of cooking and baking. They hold up well and don’t need to be replaced often. I use the large bowl all the time.

Ingredients for delicious Cranberry Apple Crisp

  • Apples- I like to use golden delicious or granny smith apples because they hold their shape well when baking. They don’t get as mushy as other kinds of apples.
  • Whole fresh or frozen cranberries- You can find fresh cranberries in the produce section around the holidays. Frozen cranberries can be harder to find and you may have to go to a few different stores, but they do make them and they’re out there. I normally buy a bunch of fresh cranberries and freeze them so I’ll have them year round.
  • Sugar
  • Light brown sugar

Ingredients for crumble topping

  • Butter- Make sure to melt this butter. You can use salted or unsalted butter in this recipe. I used salted because that’s what I normally buy.
  • Oatmeal- You can use quick oats or old fashion oats. Don’t use steel cut oats. They will not work in this recipe.
  • Light brown sugar
  • All purpose flour
  • Chopped nuts – I used walnuts because that’s what I had in my cabinet but I love the way pecans taste in this recipe too. I love pecans in Christmas and winter foods.

Instructions for the BEST Apple Cranberry Crisp

Step 1

Preheat the oven to 350F.

Step 2

Place apples, cranberries, white sugar, and brown sugar in a 9×9 baking dish and stir until apples and cranberries are coated with sugar.

Step 3

Mix melted butter, oatmeal, flour, brown sugar, and nuts in a large mixing bowl and stir well. Once combined, spread on top of the cranberry mixture.

Step 4

Bake until the crisp topping is golden brown and serve warm. It tastes great with or without ice cream!

I’m allergic to nuts. Do I have to put them in the recipe?

No. That’s what’s great about this recipe, you can leave the nuts out. It still tastes delicious without them.

How do I reheat Cranberry Crisp?

This recipe reheats really well. You can warm it in the oven, toaster oven, or even the microwave until it reaches your preferred temperature.

Followed exactly. Cranberry part total soup. Needs thickener. Disappointed as I made for Thanksgiving dinner. Ended up scooping spoonfuls on top of ice cream

I think you want the bottom part not to be super thick because it's not a bar or cake. It's a crisp and there should be some juices so it can get all mixed up together with the toppings. Sorry it's not what you expected.
