Hamburger Tomato Soup

I’ve been in the soup making mood.  We had 3 snow days last week and nothing is better than hot soup.  This one is so easy and I normally have all the ingredients in my house, so it’s easy to pull together when I’m not sure what to make for dinner.  My homemade bread goes perfectly with this meal too. This hamburger tomato soup is the perfect comfort food and the best part is that it can be made on the stove top OR slow cooker!

I’m not going to go on and on about how delicious this soup is and write a bunch of stuff you aren’t going to read anyway.  I’ll get straight to the recipe.

Hamburger Tomato Soup

Ingredients

  • 1 lb ground beef
  • 32 oz beef broth
  • 1 potato, cut into 1/2″ cubes
  • 15 oz can of peas, drained
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 28 oz can tomatoes
  • 6 oz can tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika

Who doesn't love soup on a cold winter day? This hamburger tomato soup is fantastic and so easy. Cook it on the stove top or slow cooker.Directions

  • Add onion, garlic and ground beef to pot and cook until beef is no longer pink.
  • Add all other ingredients to pot and bring to a boil.
  • Turn down and simmer for 30-45 minutes.

Crock Pot Directions

  • Brown ground beef.
  • Add cooked ground beef, broth, potatoes, peas, tomatoes, salt and pepper to crock pot.
  • Cook 2 1/2 to 3 hours on low.
