Eggless Strawberry Muffins

These eggless strawberry muffins are DELISH! It doesn’t take long for them to disappear. Make sure to make a double batch.

After my kids leave the house in the morning for school, I grab a second up of coffee, sit down and catch my breath.  It’s a whirlwind getting backpacks together, breakfasts made, lunches packed, teeth brushed, and getting them to look presentable!

 I love baking and this is about the only time I get a chance to do it, so I thought I would make a little treat for myself this morning.  I made these eggless strawberry muffins (some people call them strawberry streusel muffins) a few weeks ago and they were to die for.  My kids usually have something to say about what I make, but everything about these were delicious!

I’ve started a new exercise program and it’s killing me. I’ve been dragging. I normally just drink coffee in the morning and sometimes for a treat in the afternoons, but lately, I’ve needed a little pick-me-up to get through the day.

 I LOVE Dunkin’ Donuts coffee and I’m so glad I can get the K-cups because I can just make one cup, quick. ( You can get it at Publix.  It’s near where my son practices baseball, so I can run in there and grab what I need.)  

You can get ground coffee if you like it that way too.  I like non-flavored coffee, but sometimes I buy different flavors for a special treat. 🙂  They have a bakery flavored line with a chocolate glazed donut flavor and another with a vanilla cupcake flavor! YUMMO!  They also have a seasonal line and there’s a s’mores flavor.   I think I’m adding that to my grocery list!

Make sure you save this recipe for strawberry season. We live less than a mile from a pick your own strawberry farm and I must go there half a dozen times a year. It’s so nice to have fresh strawberries for shortcakes, smoothies, muffins and just to snack on!

Kitchen tools I love that I use to make this no egg muffin.

Silicone cupcake liners– These are my very favorite thing in the world when it comes to baking. I’ve had trouble with eggless recipes sticking to paper liners. Silicone liners pull off your cupcake or muffin so easily and nothing sticks! These are a must-have and you can wash them in the dishwasher!

Handheld Electric Mixer– You can use a stand mixer for this recipe, but you don’t have to get it out if you don’t want to. A simple hand mixer will do fine. I actually use my hand mixer way more than my stand mixer. It’s just easier to get out and clean. Anyway, the hand mixer I linked to above is one I got for a wedding gift over twenty years ago and it’s still going strong and I bake A LOT! I definitely recommend it.

Muffin Pan– This is the one I have, I think it’s a wedding gift too!

Large bowl– I LOVE stainless steel bowls. They are great in the kitchen for all kinds of cooking and baking. They hold up well and don’t need to replace often.

Ingredients for Strawberry Muffins with Crumb Topping

  • All purpose flour
  • Sugar
  • Baking powder
  • Baking soda
  • Milk
  • Applesauce- You can use sweetened or unsweetened applesauce. I used sweetened because that’s normally what I have in my pantry.
  • Fresh Strawberries- You’ll want to wash and dry, then chop them into small pieces.

Streusel Topping

A lot of people leave off toppings because of the extra work, but don’t do it! It makes these muffins FANTASTIC!

  • Flour
  • Sugar
  • Butter

Instructions for Easy Eggless Strawberry Muffin Recipe

Step 1

Preheat oven to 375˚ and spray with nonstick spray in your muffin tin.

Step 2

Combine all the ingredients in a large mixing bowl (except chopped strawberries) and stir with a wooden spoon. Gently stir in diced strawberries.

Step 3

Fill the muffin cups with muffin batter about a little more than half way.

Step 4

Make the crumble topping. Combine flour, sugar, and melted butter in a small bowl until it starts to form crumbs.  Sprinkle evenly onto muffins.

Step 5

Bake for approximately 18 minutes.
