I like adding London Broil, top round steak and flank steak to my shopping list. They are less expensive that other cuts of meat. They’re cheaper because they tend to be tougher and leaner. That’s why you need to marinade those roasts, the acid in the marinade helps tenderize them.
This London Broil recipe is so easy. If I’m not in a rush, I mix up the marinade while I’m making dinner the night before. You can also throw it together at breakfast so your meat will be ready to go by dinner. Prep time is very little for this recipe.
Ingredients for Quick London Broil Marinade
- Olive oil
- Balsamic vinegar- If you don’t have balsamic vinegar, then you can substitute red wine vinegar instead. Don’t leave the vinegar out though. It’s an important ingredient in this recipe.
- Whole grain mustard
- Worcestershire sauce
- Salt and ground black pepper
How to make marinade for London Broil (or flank steak)
Add all ingredients into a bowl and mix thoroughly.
Add your beef to a gallon sized baggie and pour marinade over the meat, seal up tight, and place in the refrigerator. Marinate London broil for at least 4 hours. The longer, the better.
Preheat the grill and cook 5-7 minutes on each side. You don’t want to overcook this! It will be tough. You are looking for around 135F for rare and 145F for medium rare. Let rest for 10 minutes before slicing. You may want to invest in a meat thermometer. I love mine that I just got off Amazon.

Of course, you don’t have to grill your London broil. You can broil it in the oven. Place your oven rack at the highest place, closest to the heat. For a 2lb roast, you’ll want to broil about seven minutes per side. This is where that meat thermometer will come in handy. The bigger the steak, the longer it will take. These are just basic guidelines and the time it takes to cook yours may differ.
Can I cook my London broil on the slow cooker?
Yes, you can even make this easy London Broil recipe even easier. Instead of marinating your meat, just pour the marinade over the top of the meat. Cook in your slow cooker on low for eight hours. You can even throw in some veggies, like potatoes, carrots and onion AND have a complete meal.
