Baked Orange Carrots

I went to visit my family before Halloween.  We get together every year around this time to of year and visit while the kids run around and play in the woods and build forts.  We always end up spending most of the time in the kitchen and eating.  Our family has several allergies in the family and others that are vegetarian so we are always trying out new recipes that everyone can enjoy.  This time some of us got together and made yummy baked orange carrots that we thought everyone would love.

These baked orange carrots are easy to make and a perfect side dish for your holiday meal. The cinnamon adds the perfect touch.Baked Orange Carrots

Ingredients

  • 5-7 carrots
  • 1 clove garlic
  • Zest of 2 oranges
  • 1 T olive oil
  • A pinch of salt
  • 1/2 a cinnamon stick
  • 1 tsp lemon juice

First you need to peel the carrots and I put my brother on this job.  We used the Potato Tool from Kitchen IQ.  It included a potato peeler, scrub brush, and then a paring knife in the handle.  My other brother that saw it later laying on the counter, who is a chef, thought it was a fantastic idea!! We sliced the carrots on a diagonal. Add those to the baking dish.  A 9×9 will work perfect for this.

Next, we zested the oranges,  I put my mom and sister on this job.  They used the Kitchen IQ Better Zester.  They both loved it.  We loved how it included an attached container that holds the zest and shows the measurements.  Add this to the dish too.

Next, add all the other ingredients and stir well until everything is mixed.  You’ll want to bake at 400F for 50 minutes, stirring a couple of times.

Kitchen IQ also has a fantastic edge grip knife sharpener.  It’s really small and you can store in in any of your drawers that’s convenient.  I sharpened all my knives when I got home.  It includes the coarse sharpening slots that will sharpen dull knifes and then the ceramic slots that will finish it off and polish them.  It took me years to know what that second slot was for.  I think everyone wanted to sneak this home to sharpen their knives!  You can brace it on the edge of your table and counter and sharpen away.

This recipe is great for the holidays or any evening you have a little extra time to cook.  You can double or triple it very easily and everyone will love it!  The Kitchen IQ items are also perfect stocking stuffers!! 🙂
