Chocolate Berry Ice Cream Pie

If you are a regular reader of my blog, then you know I’m allergic to eggs.  There weren’t a lot of options for desserts and treats when I was a kid.  Ice cream was different.  Some contained eggs, but most didn’t.  I loved it.  I could have my choice of flavor and not worry about if I was going to get sick.   It’s a little different now because there are so many new items for substitutions in recipes, but my go-to treat is still ice cream!  There is always a carton in the freezer and most the time more than one.

I grew up in Tennessee and there is a Mayfield Dairy not far from where I lived.  I’ve been on a tour and have seen them actually make the ice cream.  It was so fun.  Of course, you end up in an ice cream shop and want a scoop of every flavor! I hope to take the kids by this summer when I go visit my mom.  Every birthday party I went to as a kid always served Mayfield ice cream!  Everyone knew it was the best!  It’s been around for almost 95 years!

Over the years, Mayfield has offered signature and classic ice cream flavors inspired by southern dessert traditions. The company is now embracing its roots and returning to its original name: Mayfield Creamery, and refreshing it’s packaging graphics to bring their rich history to life.

My husband had a birthday earlier this month.  He wanted strawberry shortcake so I made it for him, but I wasn’t able to eat, eggs. Well…my daughter had a birthday too and wanted to make sure I could eat her special dessert so she chose a chocolate berry ice cream pie.  We kind of made it up as we went along and it turned out great using our favorite Mayfield ice cream.

Chocolate Berry Ice Cream Pie

Ingredients

  • graham cracker crust
  • chocolate syrup
  • 1/2 1.5 quart Mayfield Creamery Vanilla Bean Ice Cream
  • strawberries and blueberries

Directions

  • Coat the bottom of a graham cracker crust with chocolate syrup.
  • Add in half of the container of Mayfield Ice Cream. You may need to let it sit and soften up a bit.
  • Put it freezer until ready to serve.
  • When ready to serve, add a swirl of chocolate syrup on top.  Add on sliced strawberries and blueberries.
  • HINT:  You don’t want to put the berries in the freezer.  Add those on right before you serve it.

I noticed Mayfield Creamery has introduced some new flavors. I saw Lemon Ice Box Pie and Sea Salt Caramel Cheesecake when I went to Food Lion last week.  YUM!!  Mayfield Creamery uses real cream from a real dairy and no artificial growth hormones!

I love the chocolate syrup on the bottom, what a fabulous surprise! And, it's so easy, the best kind of dessert for busy moms!
