If you are a regular reader of my blog, you know that my family is very busy. I made a plan last week to start using my crock pot more because some nights we don’t get home until past 8:00. My kids (and me) are starving and tired and we need something quick.
Ingredients
- 2 lbs chicken breasts
- 3 medium peppers, sliced into strips (I used red and green because that’s what I had)
- 1 onion sliced
- 1 28 oz can of plum tomatoes, drained
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon fennel seeds (I love these and reminds me of fall. Just a small amount makes a huge difference.)
- 1/4 teaspoon thyme
Directions
These are very simple directions. I don’t normally do anything unless it’s simple. I just dumped everything into my crock pot. I didn’t even stir it up. I probably should have, but it still tasted delicious. I cooked this on low for 8 hours. I served with brown rice. My husband thought it would taste good with noodles too so I’ll do it that way next time.
