Slow Cooker Italian Chicken

If you are a regular reader of my blog, you know that my family is very busy. I made a plan last week to start using my crock pot more because some nights we don’t get home until past 8:00. My kids (and me) are starving and tired and we need something quick.

Slow Cooker Italian Chicken


  • 2 lbs chicken breasts
  • 3 medium peppers, sliced into strips (I used red and green because that’s what I had)
  • 1 onion sliced
  • 1 28 oz can of plum tomatoes, drained
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon fennel seeds (I love these and reminds me of fall.  Just a small amount makes a huge difference.)
  • 1/4 teaspoon thyme


These are very simple directions.  I don’t normally do anything unless it’s simple.  I just dumped everything into my crock pot.  I didn’t even stir it up.  I probably should have, but it still tasted delicious.  I cooked this on low for 8 hours.  I served with brown rice.  My husband thought it would taste good with noodles too so I’ll do it that way next time.
