My kids or husband don’t like zucchini, but I love it. I even stopped growing it my garden because I’m the only one who eats it! I thought I would try a different dish over the summer to see if I could get them to eat it. It’s so easy to grow and if I can get them to eat enough of it then I can start growing it again. The best part about this meal is that it takes under 30 minutes so it’s perfect for a quick week night meal. I usually have some meals in the freezer for those nights that just get away from you.
I bought this veggie spiralizer from Amazon. It was marked as a #1 seller and had over 4000 reviews so I thought I’d give it a try! I was a little nervous to try this, but it was so fun to make the zoodles!

Turkey Meatballs over Zucchini Noodles
Ingredients
- 16 frozen turkey meatballs
- 1 jar of your favorite pasta sauce
- 6 zucchini
- 2 tablespoons olive oil

Directions
- Cook meatballs according to package directions. I cooked mine in the oven for about 15-20 minutes.
- While the meatballs are cooking, use your spiralizer to make your zoodles.
- In a skillet on medium-high heat, warm olive oil and toss your zucchini noodles for about 2-3 minutes.
- Assemble all together and serve. I did 4 meatballs about 1 1/2 zucchini per person.
- Optional: top with parmesan cheese and basil.
