My daughter is having a busy week, she's turning 5 and graduating from preschool.  I am so excited for her.  We're not having a "kid" party this year, we just had a few friends and neighbors over to celebrate this past weekend.

She wanted to have a Frozen theme with Mexican food, her favorite type of food!  The menu included tacos, guacamole and my 5 Minute Chunky Salsa.  This worked out perfectly because I was at a baseball tournament all weekend so I didn't have much time to prepare.

5 Minute Homemade Chunky Salsa Recipe

This recipe is so easy and the best part is that you don't have to break out the food processor, just a bowl, knife and spoon. You don't have to use heat either so no cooking anything! The only trick is to make sure you cut your onion and pepper into small pieces so you aren't getting a big chunk of it on your tortilla chips.

Ingredients for homemade chunky tomato salsa

  • Hunt's Fire Roasted diced tomatoes
  • Bell pepper
  • Onion
  • Lime juice
  • Salt and black pepper
  • Cilantro
  • Garlic- You can use fresh garlic or garlic that's already minced that comes in a jar.
  • jalepeno (to taste)

I love, love, love fire roasted tomatoes but I would never have the time to roast tomatoes myself.  This recipe is great because you can make it ahead of time and keep in the refrigerator.

How to make recipe for chunky salsa

Step 1

Open your tomatoes and drain out most of the liquid.  Pour into bowl.

Step 2

Add diced bell peppers, chopped onions, minced garlic, chopped cilantro and lime juice and stir well.

Make sure to save a little cilantro for garnish.

Step 3

Add salt and black pepper to taste. If you are wanting to add a little spiciness, then you should add in some jalepeno now.

Mix thoroughly and serve

We ate it as a dip and it tasted great on our tacos.  It didn't last long in our house!  I'm sure you guys will love it too!
