My family loves a good breakfast. Once I went an entire year without buying cereal. I thought my kids needed a better breakfast before school so I challenged myself for my New Year resolution one year. You can read about it here. That meant my kids had to go along with it. Their tastes really changed and breakfast is their favorite meal of the day. It wasn’t easy at first, but we got through the entire year and many of my habits I created during that time have stuck.
Easy Morning Breakfast Sandwich
- 6 English muffins
- 6 slices of cheese
- 1 avocado
- 6 slices of bacon, cooked (I like to cook my bacon in the oven. Here are the instructions.)
- 6 eggs
- salt and pepper to taste
- Spray a muffin pan with a nonstick spray and an egg to each space. Cook at 350F for 12-14 minutes.
- Cook bacon.
- Toast English muffins.
- Add cheese, one piece of bacon, 2 slices of avocado, egg and salt and pepper to taste.
- Serve while warm.
