Easy Mexican Corn and Black Bean Salad

Yay! It’s summer!! We’ve been out of school for less than a week and we’re already so busy. We’ve had baseball and lacrosse and lots of days at the neighborhood pool. We had a great routine last year where I would pack a lunch and eat at the pool. It worked well because when we were at home the kids, just ate a little or all wanted something different.

I packed up our cooler and we could sit together and talk and we all ate the same thing. We’re going again today. I plan on making a Freshetta Pepperoni pizza and I made this awesome Mexican corn and black bean salad for the side.

Cutting Mats– Ok, this is the last one. I love these cutting mats. They are easy to store because they don’t take up much room. You can put them in the dishwasher. They are perfect for cutting fruits and vegetables and bending the mats to easily pour your ingredients into pots and pans.

Large bowl– I LOVE stainless steel bowls. They are great in the kitchen for all kinds of cooking and baking. They hold up well and don’t need to replace often.

Wooden Spoons– You can never have too many wooden spoons. I have an entire drawer full and use one almost every day.

Ingredients for Mexican Black Bean Corn Salad

  • Canned corn- drained
  • Canned black beans- drained and rinsed
  • Pepper jack cheese- You can use any kind of cheese you prefer, but pepper jack gives it a little spice.
  • Green bell pepper- Any color of bell pepper will work.
  • Red onion- I like to put red onions in salads because of the mild taste. It looks pretty too.
  • Lemon pepper seasoning
  • Cumin
  • Lime juice- Fresh lime juice works the best, but you can use the kind that comes in a bottle too.
  • salt to taste
  • Optional:  If you would like a spicy salad, add in some chopped jalapeños.
  • Optional #2- Chopped fresh cilantro mixed in tastes delicious. I know some people don’t like cilantro so that’s why I made it optional.

How to make a salad with black beans and corn

I love this salad because it’s VERY easy to prepare.  

Step 1

All you do is put everything into your bowl and stir!!  It’s so easy.

Store the prepared salad in an air-tight container in the refrigerator until you’re ready to serve.  This is fantastic the next day too.

This is also good with tortilla chips!!

You can have this corn and bean salad prepared in 10 minutes and dinner can be ready as soon as the pizza comes out of the oven.

Ingredients

  • 2 cans corn drained
  • 2 cans black beans drained and rinsed
  • 8 oz package of pepper jack cheese cubed
  • 1 green pepper chopped
  • 1/2 red onion chopped
  • 1 tbsp lemon pepper
  • 1 tbsp cumin
  • splash of lime juice
  • salt to taste
  • Jalapenos optional

Instructions

  • Add all the ingredients to a bowl, stir and serve.
  • So EASY!!

One of my favorite salads! I put in lots of avocado too! I never thought of packing it for a picnic, though! Smart!
