Mexican Corn and Black Bean Salad

Yay!  It’s summer!!  We’ve been out of school less than a week and we’re already so busy.  We’ve had baseball and lacrosse and lots of days at the neighborhood pool.  We had a great routine last year where I would pack a lunch and eat at the pool.  It worked well because when we were at home the kids, they just ate a little or all wanted something different.

Mexican Corn and Black Bean Salad

I packed up our cooler and we were able to sit together and talk and we all ate the same thing.   We’re going again today.  I plan on making a Freshetta Pepperoni pizza and I made this awesome Mexican corn and black bean salad for the side.

Ingredients for Mexican Black Bean Corn Salad

  • Canned corn
  • Canned black beans
  • Pepper jack cheese- You can use any kind of cheese you prefer, but pepper jack gives it a little spice.
  • Green bell pepper- Any color of bell pepper will work.
  • Red onion
  • Lemon pepper
  • Cumin
  • Lime juice- Fresh lime juice works the best, but you can use the kind that comes in a bottle too.
  • salt to taste
  • Optional:  If you would like a spicy salad, add in some chopped jalapeños.
  • Optional #2- Chopped fresh cilantro mixed in tastes delicious. I know some people don’t like cilantro so that’s why I made it optional.

How to make salad with black beans and corn

I love this salad because it’s VERY easy to prepare.  

Step 1

All you do is put everything into your bowl and stir!!  It’s so easy.

Store the prepared salad in an air-tight container in the refrigerator until you’re ready to serve.  This is fantastic the next day too.

This is also good with tortilla chips!!

I picked up my Freschetta pizza at Walmart when I was doing my regular grocery shopping.  I usually keep extra on hand because you never know when extra kids will end up at your house or you’re just to tired to cook dinner! You can have this corn and bean salad prepared in 10 minutes and dinner can be ready as soon as the pizza comes out of the oven.

  • 2 cans corn drained
  • 2 cans black beans drained and rinsed
  • 8 oz package of pepper jack cheese cubed
  • 1 green pepper chopped
  • 1/2 red onion chopped
  • 1 tbsp lemon pepper
  • 1 tbsp cumin
  • splash of lime juice
  • salt to taste
  • Jalapenos optional


  • Add all the ingredients to a bowl, stir and serve.
  • So EASY!!

One of my favorite salads! I put in lots of avocado too! I never thought of packing it for a picnic, though! Smart!
