Yea!  It’s summer!!  We’ve been out less than a week and we’re already so busy.  We’ve had baseball and lacrosse and lots of days at the neighborhood pool.  We had a great routine last year where I would pack a lunch and eat at the pool.  It worked well because when we were at home the kids, they just ate a little or all wanted something different.  I packed up our cooler and we were able to sit together and talk and we all ate the same thing.   We’re going again today.  I plan on making a Freshetta Pepperoni pizza and I made this awesome Mexican corn and bean salad for the side.

  • 1/2 red onion, chopped
  • 1 tbsp lemon pepper

  • Optional:  If you would like a spicy salad, then you can take out the green pepper and add in a couple of chopped jalapeños.Mexican Corn and Bean Salad

I love this salad because it’s VERY easy to prepare.  All you do is put everything into your bowl and stir!!  Store the prepared salad in the refrigerator until you’re ready to serve.  This is fantastic the next day too!

I picked up my Freschetta pizza at Walmart when I was doing my regular grocery shopping.  I usually keep extra on hand because you never know when extra kids will end up at your house or you’re just to tired to cook dinner!

Freshetta has 100% real provolone and mozzarella cheese and a crust that has no chemical leaveners.  It’s made with high quality ingredients and you can really taste it.  The sauce is the best!

  1. One of my favorite salads! I put in lots of avocado too! I never thought of packing it for a picnic, though! Smart!
