My family is a meat-loving family. We usually have some sort of meat at every meal. I’ve tried meatless Mondays, but after a few weeks, I’m back to cooking my normal meals. Now that we’re in the middle of Lent, I’m back to finding a meatless dish on Fridays and it’s tough for me. Luckily my kids love salad recipes and I can try different kinds and dressings. They like this one!
I decided to have the STOUFFER’S® Mac & Cheese. It takes 75 minutes to cook so I put that in the oven and made the salad and dressing while it was cooking. I even had time to help with some homework! They have a family size that contains no preservatives and real cheddar.
Poppy Seed Dressing Recipe
- Apple cider vinegar
- Vegetable oil
- Salt
- Honey- No sugar in this recipe, honey is used instead.
- Poppy seeds
- Onion powder
- Mustard- I love mustard with spinach so I add a lot. You may want to start with a small amount. You can you yellow or dejon, whatever you already have in the house.
I like to keep the dressing I make in a jar because I have a ton of them. I’ve had a disaster once when I shook a dressing up so I prefer a tight fitting lid too! Just put everything into the jar and shake well. It’s pretty simple and what you don’t use you can keep in the refrigerator to use again.
Spinach Salad Ingredients
- leaf spinach
- strawberries
- pears or apples
- walnuts
- feta
- dried cranberries
My kids love salads with fruit so this is a favorite. I chose pears for the salad today because we haven’t had them in a while and I wanted to change things up a little. You can leave off anything you don’t like.

Poppy Seed Salad Dressing
Ingredients
- 1/2 cup apple cider vinegar
- 1 cup vegetable oil
- 1 teaspoon salt
- 1/4 cup honey
- 1 Tablespoon poppy seeds
- 1/2 teaspoon onion powder
- 1-3 teaspoon mustard
Instructions
- Put all the ingredients in a jar and shake.
- Keep in refrigerator.
