No Bake Eggless Peanut Butter Pie Recipe

Quarantine day 1118, at least it feels like it! The kids are somewhat busy with school and my husband is still able to work from home so we’re just taking it day by day.

We took the kids on a field trip to my husband’s office today to get sodas that were in his mini fridge! He has an office by himself, so it was nice to get out of the house for a few minutes.

I know our grocery stores are low on flour and sugar. I have plenty of flour at the house because I’m always baking, but my sugar supply is getting low since I’ve been making a lot of cookies.

My kids love eggs and the last time I went out, they were out of eggs too! I am getting a ton of page views on my eggless baking recipes. People can’t find eggs, I guess, and are looking for eggless recipes!

Hint: I’m having the most luck at finding foods at my closest Dollar General! The only thing they didn’t have was sugar.

Peanut Butter Icebox Pie

I dug around in my pantry and decided to make a pie today. There was some Cool Whip in the freezer and I had a graham cracker pie crust so I was good to go!

I tried to make my pictures as fancy as possible with what I had here at home and that was only chocolate syrup. Normally, you can add all kinds of toppings and, of course, whipped cream, crushed Oreos, and peanut butter cups!

Tools to make Peanut Butter Pie

Luckily, this recipe is super easy to make and you don’t need much to make it.

Handheld Electric Mixer– You can use a stand mixer for this recipe, but you don’t have to get it out if you don’t want to. A simple hand mixer will do fine. I actually use my hand mixer way more than my stand mixer. It’s just easier to get out and clean. Anyway, the hand mixer I linked to above is one I got for a wedding gift over twenty years ago and it’s still going strong and I bake A LOT! I definitely recommend it.

Large bowl– I LOVE stainless steel bowls. They are great in the kitchen for all kinds of cooking and baking. They hold up well and don’t need to replace often.

Cream cheese– I normally use the store brand to save a little money.

Powdered sugar

Peanut butter– You’ll want to use creamy peanut butter because you don’t want crunchy chunks in your pie.

Vanilla extract– I love vanilla! It gives baked goods such a great flavor. I make homemade vanilla extract and it’s super easy because it only takes two ingredients. You can hop over there to see the instructions on that if you’re interested in making your own too.

Cool Whip– You can use any store brand whipped topping you prefer.

Graham cracker crust– You can make your own crust but I normally use store bought AND store brand crust. I like regular graham cracker crust but you can use chocolate flavor too.

How to make peanut butter pie with Cool Whip

  1. Beat cream cheese, powdered sugar, peanut butter, and vanilla extract until smooth. Add in the Cool Whip.
  2. Once smooth, pour the filling into the pie crust.
  3. Refrigerate for 4 hours to let the pie set.
  4. Drizzle chocolate sauce on top before serving.

You can make your own graham cracker pie crust for this recipe, but buying one makes this recipe quick and easy.

Ingredients

  • 8 oz cream cheese softened
  • 3/4 cup powdered sugar
  • 2/3 cup peanut butter creamy
  • 2 teaspoons vanilla extract
  • 8 oz Cool Whip
  • 9" graham cracker crust
  • chocolate sauce

Instructions

  • Mix softened cream cheese, powdered sugar, peanut butter, and vanilla until smooth.
  • Add in the Cool Whip and mix.
  • Once smooth, pour into your pie crust.
  • Refrigerate for 4 hours to let the pie set.
