If you’ve been following me on Facebook lately, you know I’m in a dinner rut. Nothing sounds good and I haven’t been in the mood to cook at all. Maybe it’s spring fever! My kids love making pizza so I thought it would be perfect for a quick and convenient dinner when I’m running in a million different directions. When practice ends at 7, I need a dinner that’s fast and easy.
Easy Bruschetta Chicken Pizza
I just did another bruschetta recipe and remembered I had this yummy chicken pizza recipe so I thought I would come over here and update it a little and add it to my menu this week.
I decided to make this recipe using naan. Naan is a bread mainly used in India and other Asian countries. You can find it easily in most grocery stores. The naan I got was from Aldi and in the bread aisle. It’s the perfect size for a personal sized pizza.
Kitchen Tools to make Bruschetta Flatbread Recipe
Cutting board mats– These are so easy to clean and use when cooking. You can bend them easily so that makes it easier to add ingredients to other bowls or pots and pans.
Baking Sheet– I’ve had these baking sheets forever and love that they are bigger. I can usually get 16 cookies on a sheet when I’m baking. They are perfect to get the pizza off your grill!
Pizza Cutter– You’ll need a pizza cutter to cut your pizza and this one is awesome. I love that it’s smaller and doesn’t take up much room in your kitchen drawer.
Ingredients for bruschetta flatbread pizza
Ground chicken– You can cook up your ground chicken in advance to save time. I used Mighty Spark brand chicken for this from Publix, bruschetta flavor, but any ground chicken will do. You can also use sliced up chicken breasts if you prefer.
Mozzarella– Fresh mozzarella works best for this because it melts so good!
Basil– Make sure to use fresh basil. I always have some growing in my backyard. If you don’t have that, then dried will do. You will need to reduce the amount you use though.
Pasta sauce– You can use your favorite sauce- homemade or jarred.
Tomato– Slice the tomatoes as thick or thin as you want them.
Naan– Each grocery store is different and keeps their naan in a different spot. You can even find some in the frozen food section. I would check the bakery/bread section first.
Of course, you can make your own pizza dough but I like to keep things as simple as I can and naan is a great substitue.
Here are the instructions for this easy bruschetta pizza recipe
Step 1
Place naan on a medium-high grill and grill one side to make it a little crispy. It only takes a few minutes.
Step 2
Place ground chicken in a pan. Cook for about 15 minutes, making sure to crumble while cooking.
Step 3
Spoon pasta sauce on naan (grilled side up) and top with ground chicken, sliced mozzarella, tomatoes, and basil leaves.
Step 4
Place back on the grill and cook for 3-5 minutes or until cheese is melted.
Tip #1
If it’s cold out or you’re not in the mood to grill, then you can always make this pizza in the oven.

Grilled Chicken Bruschetta Pizza
Ingredients
- 1 lb ground chicken
- 4 oz fresh mozzarella
- 20 fresh basil leaves
- 1 1/2 cups pasta sauce
- 4 pieces naan
Instructions
- Place naan on medium-high grill and grill one side to make it a little crispy. It only takes a few minutes. Do not flip.
- Place ground chicken in pan set on medium high on the stove and cook for about 15 minutes, making sure to crumble while cooking.
- Spoon pasta sauce on naan (grilled side up) and top with ground chicken, sliced mozzarella, tomatoes, and basil leaves.
- Place back on grill and cook for 3-5 minutes or until cheese is melted.
