If you are one of my eggless recipe readers, I bet you've been wondering when another recipe is coming out!  It's finally here- EGGLESS SNICKERDOODLE COOKIES!

I've been so busy with the summer and lacrosse tournaments, travel, kids and really a lot of laziness.  I haven't felt like turning on the oven lately.

I've also been trying to reduce my sugar.  I went on a no soda 30 day challenge in May and I've really stuck to it and I've only had 3 Cokes all summer.  It really has decreased my cravings for sugar overall.

For those of you that are just finding me and my recipes for the first time, I'll tell you a little about myself.  I am allergic to eggs and I don't like making things I can't eat.  My mom discovered I was allergic to eggs when I was around 6 months old- so 40 years ago.

When I was young I really just stuck to Dairy Queen ice cream, Oreos, and Chips Ahoy, and M&Ms for any sweet treats.  Now I have more time and my kids are older to try out some recipes that I can eat.

Eggless Snickerdoodles

First off- Snickerdoodles Cookies are one of the most googled cookies out there.  Of course, I have to try an eggless version.  

All I really know about snickerdoodle cookies are that they have cinnamon in them and what they look like.    I've never had a snickerdoodle with eggs so I'm hopefully close to the egg version.  

My husband proclaimed, "I like these better than the eggless chocolate chip cookies!"  This is huge since my chocolate chip cookie recipe is ranked one of the top in Google and they are DELICIOUS! 

He's usually my taste tester and tells me how they taste compared to baked goods with eggs, using lots of adjectives.  I know if I like something, but will an egg eater like it too?

Baking Sheet– I’ve had these baking sheets forever and love that they are bigger. I can usually get 16 cookies on a sheet when I’m baking.

Handheld Electric Mixer– You can use a stand mixer for this recipe, but you don’t have to get it out if you don’t want to. A simple hand mixer will do fine. I actually use my hand mixer way more than my stand mixer. It’s just easier to get out and clean. Anyway, the hand mixer I linked to above is one I got for a wedding gift over twenty years ago and it’s still going strong and I bake A LOT! I definitely recommend it.

Large bowl– I LOVE stainless steel bowls. They are great in the kitchen for all kinds of cooking and baking. They hold up well and don’t need to replace often.

Eggless Snickerdoodle recipe

Ok-  You don't need anything special to make this recipe.  There are so many recipes I find that are egg free, I click on it and it has all these weird ingredients that I don't have and probably never use.  I've cleaned out my cabinets several times and found some of these things with expiration dates over 2 years ago!

I keep all my recipes with ingredients that you normally have and that you don't have to buy from a specialty store.

Ingredients for snickerdoodles without eggs

  • All purpose flour
  • Baking powder
  • Ground cinnamon
  • Butter - I normally buy salted butter so that's what I used In this recipe. You can use unsalted butter too. Your butter will need to be room temperature before you start so make sure you set it out earlier in the day.

You can make these into vegan cinnamon cookies by replacing the butter with vegan butter, such as Earth Balance.

  • Granulated sugar
  • Brown sugar
  • Vanilla extract- I love vanilla. I make my own and it's super simple to do. I have the recipe over on another page. There are only two ingredients so you should go check that out.
  • Vegetable oil
  • Water

How to make cinnamon cookies

Step 1

Preheat oven to 350F.

Add flour, baking powder and cinnamon to a bowl. Stir and set aside.

Step 2

In another bowl, add sugar, brown sugar and room temperature butter. Beat with a mixer for about two minutes, until smooth.

Step 3

Add vanilla, water and oil to butter and sugar mixture and beat until combined.

Step 4

While mixing, slowly add dry ingredients to wet ingredients until smooth.

Step 5

To make topping, combine sugar and cinnamon in a small bowl. Roll cookie dough balls into 1 inch balls and roll in cinnamon sugar mixture until coated.

Ingredients

  • 2 cups flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ½ cup salted butter 1 stick
  • ½ cup sugar
  • ¼ cup brown sugar
  • 1 ½ teaspoons vanilla
  • 2 tablespoons vegetable oil
  • 2 tablespoons water

Sugar Coating

  • ¼ cup sugar
  • 1 teaspoon cinnamon

Instructions

  • Preheat oven to 350F.
  • Add flour, baking powder and cinnamon to a bowl. Stir and set aside.
  • In another bowl, add sugar, brown sugar and room temperature butter. Beat with a mixer for about two minutes, until smooth.
  • Add vanilla, water and oil to butter and sugar mixture and beat until combined.
  • While mixing, slowly add in dry ingredients to wet ingredients until smooth.
  • To make topping, combine sugar and cinnamon in a small bowl.
  • Make dough into 1 inch balls and roll in sugar and cinnamon mixture until coated.
  • Place 12 at a time on a baking sheet and bake for 9-11 minutes.

    I just made these and while they may be a good eggless option, after trying I realized they were definitely missing something - salt! They definitely need a little bit of salt to balance the flavors. Overall not a bad recipe, but I would add salt if I were to make them again.

  3. Hi. I tried this recipe and my cookies didn’t flatten out:(. It tasted really really good though. Can you help me understand why they would not flatten out?

    1. Usually cookies don't flatten out because there was too much flour. Could you have added more by accident?

  6. this is gonna sound pathetic but i've been having a stressful week and the homework stress is unreal,, but baking always helps me out,, i had low expectations for an egg-free recipe but honestly i'm so impressed and these cookies made my night so much better,, i can't wait to share them with all my similarly-stressed high school student friends.

  7. No salt?? I added salt and had to add additional oil and water to even get the dough to come together. They're in the oven now..... But just curious, why was there no salt in your recipe?

    1. I noramlly use salted butter so I didn't add any additional salt for this recipe. You could probably add 1/4 teaspoon if you want. I know some poeple feel weird about not adding a little salt.
