Easy Cranberry Buttermilk Pancakes for you holiday leftovers

What do you normally eat for breakfast the day after Thanksgiving or Christmas?  Here’s a good one for those cranberry sauce lovers (my husband).   EASY CRANBERRY PANCAKES!  I’ve included a pancake recipe too!  

Cooking is not what I want to do the day after a holiday. After cooking so much the week and day before, I like to take it easy the few days after. This is the perfect recipe!

I know people love butter and maple syrup on top of their pancakes, but this recipe is so simple and delicious.  I hate food going to waste and most people eat cranberry sauce or they don’t.

Cranberry Buttermilk Pancakes

I love fresh cranberries and always buy extra around the holidays and freeze them. I have several recipes I make with them. This cranberry apple salad for a pork loin in my very favorite! I think they are just about my favorite fruit. They are a fruit, aren’t they?

Cranberries are high in antioxidents, help with UTI’s and may help decrease blood pressure. I eat craisins every morning in my oatmeal. You can buy unsweetened or low sugar dried cranberries to make it even healthier.

I have a lot of eggless recipes on my site, however, this recipe does have eggs. If you are looking for an eggless pancake recipe, you can use this one. I’m not a big pancake eater so I don’t have one posted on my site, but my kids LOVE them. Maybe I should put that I my to do list.

First, you have to have cranberry sauce for this recipe and this homemade cranberry sauce recipe is the best. If you’ve never tried making your own, then you are missing out. Only a few ingredients are required, doesn’t take long, and the best part…you can make it several days in advance.

Ingredients for buttermilk pancakes

  • All purpose flour
  • Baking powder -(NOT BAKING SODA)
  • Salt
  • Granulated sugar
  • Eggs
  • Buttermilk
  • Vegetable oil
  • Vanilla- Learn to make your own here. It’s so easy!
  • Leftover cranberry sauce– This is a recipe that I have here on my website and it’s delish! It only has a few ingredients- fresh cranberries and the orange zest is my secret ingredient!

How to make pancakes

  • Combine your dry ingredients in a large bowl- flour, baking powder, salt, and sugar together in bowl and stir.
  • Add in eggs, buttermilk, vanilla and oil and mix well.
  • Heat pan to medium and pour 1/4 cup batter for each pancake.  Cook for 3-4 minutes and flip.  Cook until golden brown.
  • Stack 3 pancakes and top wth 1/2 cup of left over cranberry sauce.

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar

  • 2 cups buttermilk

Instructions
