Eggless Sweet Potato Casserole

This eggless sweet potato casserole is so easy and has the perfect fall flavors with a little crunch on top.

One of my favorite things about the fall is the food and my sweet potato recipes start coming out! My family and I love sweet potatoes! This is perfect if you’re looking for some new Thanksgiving recipes. However, I don’t just make them for Thanksgiving dinner, I make them all season long. It’s delicious and the perfect side dish.

This recipe goes great with this pork with cranberry apple salad or slow cooker pork and apples.

Eggless Sweet Potato Casserole

One reason sweet potatoes are so great is the price. You get a lot of food and it’s not very expensive.

Another reason is that they’re so good for you. They have tons of vitamins, antioxidants, and fiber. They help your vision and your immune system, which is really important right now anyway!

Tools to make Sweet Potato Casserole without eggs

Handheld Electric Mixer– You can use a stand mixer for this recipe, but you don’t have to get it out if you don’t want to. A simple hand mixer will do fine. I actually use my hand mixer way more than my stand mixer. It’s just easier to get out and clean. Anyway, the hand mixer I linked to above is one I got for a wedding gift over twenty years ago and it’s still going strong and I bake A LOT! I definitely recommend it.

Large bowl– I LOVE stainless steel bowls. They are great in the kitchen for all kinds of cooking and baking. They hold up well and don’t need to replace often.

Baking Dish– This is a great 9″ X 9″ baking dish that comes with a lid. I like it because it turns into an airtight container you can store your leftovers in.

Nut Chopper– You can buy nuts that are already chopped for this recipe or you can chop them up yourself. I love these nut choppers. I was always in charge of this when I was a kid.

Ingredients for Sweet Potato Casserole Recipe

  • Large Sweet Potatoes
  • Milk

Topping Ingredients

  • Butter, melted
  • Oatmeal– Quick or regular oats will work fine.
  • Brown sugar
  • All Purpose Flour
  • Cinnamon
  • Chopped nuts– I used walnuts in this recipe because that’s what I had in my cabinet. Chopped pecans taste good in this too.

How to make sweet potato casserole without eggs

Step 1

First, you’ll want to cook sweet potatoes, which you can do whatever way you’d like.

  • Slow Cooker- You can cook them this way if you have plenty of time. Perfect if you are making it a couple of days before you need it.
  • Instant Pot- This recipe is super easy!
  • Roast your sweet potato in the oven, maybe 45 minutes.
  • Boil- Peel and quarter and boil for 30 minutes in a large pot. (This is the fastest and the one I use for this recipe.)

Step 2

After boiling the potatoes, drain and add back to your pot. Add milk.

Step 3

Make the sweet potato mixture by beating the sweet potatoes with an electric mixture or potato masher. Add your sweet potato filling to a 9×9 baking casserole dish or a 2 quart casserole dish.

Step 4

Make the pecan topping by combining melted butter, oatmeal, sugar, flour and nuts into a bowl and stir. Spread evenly over mashed sweet potatoes.

Step 5

  • Bake for 45 minutes at 350 degrees. The topping will start to turn a golden brown.

Ingredients

  • 4 large sweet potatoes
  • 1/2 cup milk

Sweet Potato Bake Topping

  • 1 stick butter melted
  • 1 cup oatmeal I use quick or regular oats.
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/3 cup chopped nuts pecans or walnuts

Instructions

  • Preheat oven to 350F.
  • Peel and quarter sweet potatoes and boil for 25 minutes or until done.
  • Drain sweet potatoes and add them back to the pot, along with the milk. Beat the sweet potatoes with an electric mixer and add to a 9X9 baking dish.
  • Combine melted butter, oatmeal, sugar, flour and nuts into bowl and stir until combined. Spread evenly over sweet potato puree.
  • Bake for 45 minutes.
