We make these several times a month at my house and now my 12 year old has taken over some of the duties and can make them by himself. (He usually leaves the cleaning up to me though!) We're working on that!

Easy Eggless Chocolate Chip Cookies
For those of you that are just finding me and my recipes for the first time, I'll tell you a little about myself. I'm allergic to eggs and I don't like making things I can't eat. My mom discovered I was allergic to eggs when I was around 6 months old- so 40 years ago.
When I was young I really just stuck to Dairy Queen ice cream, Oreos, and Chips Ahoy, and M&Ms for my any sweet treats. Now I have more time and my kids are older to try out some recipes that I can eat. However, I still love Dairy Queen!!
This recipe is great if you like to snack on the dough and I have to remind my kids that most people put eggs in the dough and you can't eat it. I think each of my three kids eat at least 2 cookies worth of dough.
KITCHEN Essentials
Luckily, you don't need any special kitchen tools to make this recipe. Most people have everything they need already!
Large bowl– I LOVE stainless steel bowls. They are great in the kitchen for all kinds of cooking and baking. They hold up well and don’t need to be replaced often.
KitchenAid Hand Mixer- You can use a stand mixer for this recipe, but you don’t have to get it out if you don’t want to. A simple hand mixer will do fine. I actually use my hand mixer way more than my stand mixer. It’s just easier to get out and clean. Anyway, the hand mixer I linked to above is one I got for a wedding gift over twenty years ago and it’s still going strong and I bake A LOT! I definitely recommend it.
Cooling Rack– I like the one linked because it doesn’t take up much room in your cabinet.

- Beat the butter with white and brown sugars for 1 to 2 minutes, until creamy with an hand mixer (This is the one I got for my wedding and it’s still going strong). I just got this mixer as a Christmas gift and LOVING it!
- Add in flour and baking soda. Mix.

- Fold in the chocolate chips with a wooden spoon.
- Drop by spoonful onto the baking sheet. I usually do about 1-2 tablespoons and put 12-16 on the cookie sheet.

Frequently asked questions
Why is my dough dry or crumbly?
First, it should not be crumbly and should look moist and stick together well. You may have to go back several times and slowly add water and mix until the dough comes together.
Are these going to taste like an eggless cookie, or like a normal chocolate chip cookie?
When these come out of the oven, they are gooey and soft. When cool, they are a little crunchier but still soft.
Do I need to chill the dough?
No. I know there are some cookie recipes where you chill the dough, but I have never chilled my dough for any of my recipes. Who has time for waiting any longer?
Does my butter have to be at room temperature?
Yes! I have rushed a few times and the butter was not soft. When the butter is too cold it will not mix with the other ingredients well. Also, do NOT melt the butter in the microwave to rush things along. It makes the cookies greasy and flattens them out.
Do I need a mixer?
No! You can actually just use a fork to mix the dough if you don't want to pull out the mixer and clean it. Just make sure you stir until it's creamy!
Can I freeze these chocolate chip cookies?
Of course! This is the best part about this recipe. You can make a double batch and save some for later. After baking, let the cookies completely cool and place is a freezer storage bag. Try to get as much air out of the bag as you can. It will store a few months in the freezer, but I doubt they'll last that long.
Can I make this vegan?
Yes! I have used vegan butter and chocolate chips and it turns out great. I use Earth Balance butter.
Can I make this gluten free?
I have never tried to make this recipe using gluten free ingredients. I have never baked with gluten free flour. If you do experiment, please let me know how it turns out.
