Mini Applesauce Muffins
These delicious muffins are healthy and homemade. The best part is that this original recipe uses basic pantry staples and doeesn't have any ingredients that I can’t pronounce. There is no special egg replacer that you'll never use again that cost a fortune. They really don’t take long at all and are perfect when you have an extra hour.
I actually have a hiding place in my kitchen for lunch things that I don't want the kids to eat. If I left it out in the pantry, it would be gone before the weekend was over and none of it would make it to the lunch boxes.
I have an egg allergy so I use Mott's® Natural Applesauce in many of my recipes as a substitution. You can also use applesauce in any recipe that calls for oil. Use ½ measuring cup of applesauce for every ½ cup of oil It's great to reduce calories in baked goods and adds moisture!

Tools to make this Applesauce Muffins Recipe
Handheld Electric Mixer– You can use a stand mixer for this recipe, but you don’t have to get it out if you don’t want to. A simple hand mixer will do fine. I actually use my hand mixer way more than my stand mixer. It’s just easier to get out and clean.
Anyway, the hand mixer I linked to above is one I got for a wedding gift over twenty years ago and it’s still going strong and I bake A LOT! I definitely recommend it.
Large bowl– I LOVE stainless steel bowls. They are great in the kitchen for all kinds of cooking and baking. They hold up well and don’t need to replace often.
Mini muffin tray- If you have read any other of my muffin recipes then you know I swear by silicone liners. They make clean-up so easy and no muffin is stuck to a paper liner. This is a great silicon pan for mini muffins. They always come out looking good.
Wire Rack – These are my very favorite and the main reason is that they don’t take up a lot of space in my cabinet.
Silicone muffin liners – OK- You won't need these in this recipe because these are mini muffins but for the normal-sized muffins, these are a must! You can just throw them in the dishwasher. This is a 12 pack so make sure to purchase two! They are a necessity for eggless recipes. The cupcake doesn’t stick to the silicone, so you aren’t throwing away half the cupcake that’s stuck to the paper.
Ingredients for eggless applesauce muffins
- Butter- I used salted butter in this recipe because that's what I normally buy, but unsalted will work also. Make sure it is room temperature NOT melted butter.
- Sugar
- All purpose flour
- Applesauce- You can use sweetened or unsweetened applesauce in this recipe. I used sweetened because that's normally what I have in my refrigerator.
- Salt
- Baking powder
- Baking soda
- Water
- Vanilla extract- Did you know you can make your own vanilla? Here's how to make homemade vanilla! It's easy and only has two ingredients.
- cinnamon sugar mixture for topping
- Optional: You can throw in a few mini chocolate chips if you want!

Directions for the applesauce muffin recipe
Step 1
Preheat oven to 350F.
Step 2
Add the room temperature butter and sugar to a large mixing bowl and cream using an electric mixer. It will take a couple of minutes.
Step 3
After you cream the butter and sugar, put all the other dry ingredients into the bowl and continue mixing.
Step 4
Spray your mini muffin cups with a nonstick spray. Spoon batter in the muffin tray ½- ¾ full. Sometimes it's hard to gauge this because they are already so small. Try to get them as even as possible so they'll all be done cooking at the same time. Sprinkle about ¼ teaspoon of the cinnamon/sugar mixture on top of each mini muffin and bake.
Place on the center rack of the oven and baking time runs about 12 minutes or when they turn golden brown.
You can check if your applesauce mini muffins are done by pulling out a toothpick inserted in the center of the muffin and it coming out clean. If there is batter on the toothpick, then the muffin needs a little more cooking. However, it doesn't need to cook long since the muffins are small.
Step 5
Let cool on a cooling rack and store any leftover muffins in an airtight container. Freezer bags work great.
Tip 1
Many people are commenting that the batter is thick. The muffin batter is supposed to be thick. You didn't do anything wrong!
Tip 2
You can make these into vegan applesauce muffins by replacing the butter with a vegan brand such as Earth Balance. My brother is allergic to milk so this recipe is perfect for those with a milk allergy too.

Ingredients
- ¼ cup butter softened
- ⅓ cup sugar
- 1 ½ cups flour
- ½ cup Mott's Applesauce
- ¼ teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 3 Tablespoons water
- 1 teaspoon vanilla
- sugar and cinnamon mixture for topping
Instructions
- Preheat the oven to 350F.
- Cream the softened butter and sugar with an electric mixer.
- Add in applesauce and mix.
- Add dry ingredients.
- Grease your mini muffin pan before filling ½- ¾ full.
- Sprinkle about ¼ teaspoon of the cinnamon/sugar mixture on top of each mini muffin.

Would they still taste good without adding the sugar? Would the recipe have to be adjusted?
I just had to come back and say that these are my family's #1 FAVORITE muffin ever. My daughter has an egg allergy, and I have tried all kinds of recipes with substitutes and then I found these. We make them weekly and I double the recipe to make a full pan of 24 mini muffins. We often skip the cinnamon and sugar on top to slightly lower the sugar content. They are still delicious! Yes, the batter is super thick--I spoon it into the pan. And I watch them very carefully while they bake. I take them out when just starting to golden brown so they end up fluffy and moist, like cake. Let's just say that a double recipe disappears in less than 3 days at our house! Thank you, Holly, for this life saver!!

Do you think you could make full sized versions of these muffins? What would I need to change?
I've never made them any bigger, but I think they'll turn out. You just need to cook them longer.
I added 1/4 cup additional apple sauce, tiny apple bits and cinnamon to my mix. They are yummy!
Doesn’t look anything like the photo. The dough was thick and sticky not like muffins dough. Therefore final product was not light and fluffy like shown. Tasted like a low sugar cinnamon muffin couldn’t really detect flavor of the applesauce. Still tasty though. I’d recommend adding raisins or small pieces of apple if you want a chunky or fruity muffin. I’m not sure how to solve the consistency if it is important to you to have a fluffy muffin like the pic. Good luck!
Sorry you had an issue with the dough. The muffin really isn't suppose to have a real apple flavor, but replaces the egg binder. Adding chunky applesauce would be good though! Many of my recipes are eggless because of allergy so cakes and muffins won't be as fluffy and light as ones with eggs.

This is a great recipe and they are delicious, but the consistency was dry. How do I keep them from crumbling.
Like some of the other comments, the dough turned out thick, like bread dough almost. I sifted the flour although the recipie didn't. require it, and I used home made AS...I wonder if the brand you suggested is more liquidy which resulted in a pourable. batter for you? The finished product was more like a scone than a muffin, it actually makes a good scone, but could cause disappointment. if one was expecting a soft and moist muffin.
